Poppy Seed Chicken Casserole is my all time favorite. It's just me so I buy a rotisserie chicken and get 5 meals. I make a 5 x 6 dish of the casserole.
We love it so much! My kids regularly request poppy seed chicken - including for their birthday dinners!

Scientifically breaking down how much food costs per person is roughly 200 dollars. Any raised prices of food starves the people. Why are we raising prices? Stores have self serv stations for less spending of the stores. Are the warehouses overstocked yet from higher prices? There is a solution to that.
There is lots to say about prices and inflation indeed!

I see you shop at Aldi's. You said your husband is not a fan of spaghetti. Try the Brown Rice and quinoa organic pasta from Aldi's , it's amazing and you can't beat the taste. Just don't over cook it. Aldi's also carries the uncured grass fed beef hot dogs which are amazing compared to the traditional processed hot dogs in the stores. We are a family of 5 adults and do a full 3 month pantry challenge. We grow a huge garden and preserve as much as we can. We are well stocked on canned meats,, tuna, wild caught salmon, haddock and cod. In the summer we bulk buy dry goods like flour, sugar, chia seeds, flax seeds, organic oatmeal, chocolate chips, dry beans to last us a year. Around Sept. or Oct. I like to stock up on organic frozen berries and veggie as well as Avocado's that we don't grow. We have a stock pile of real maple syrup and local honey that we get from a friend. We also stock pile dried fruits, nuts, pop corn for popping as well to last the year. We fall short on dairy like yogurt, milk, creamers, whipping cream and cheese so we allow ourselves fifty dollars per month for those items. We raise our own chickens, ducks and quail for eggs and meat .
Thanks for the Aldi recommendations! I will keep my eyes open for them. Unfortunately, my husband is not really a pasta fan at all. But spaghetti is his absolute least favorite! Thankfully the kids like pasta along with me! 😁

Love love love my London Shine dehydrator. Hands down the BEST dehydrator I’ve ever owned. I totally agree that the cheaper ones are not worth it. I found I spent more money buying them than when I broke down and spent the money on the London shine. No regrets and one of best kitchen purchases I’ve ever made!
I agree! I thought I didn't like dehydrating but it really was the cheap dehydrator that I didn't like! It is so much easier and efficient now with my London Sunshine! Glad you love it too! ❤️
Enjoy very much seeing what you came up with during your challenge. That’s how we did it as well. We simply cannot afford to miss the sales, discounts and clearance food. It’s the only way I can feed my family as cheaply as I do but we did minimally buy in January. Honestly we have months like March that we have a ton of large bills coming due in addition to farm expenses like feeder pigs, seeds, fertilizer, fuel etc. so match is one we don’t buy much food, if any other than fresh milk and produce. So I love your ideas with the food with you have leftover because it helps me with ideas! I also enjoy your Kroger videos, it helps me narrow down the best deals there. We typically shop on Mondays after homeschool co-op but certain things I know will sell out quicker so i can run out Friday before doordashing! So I truly appreciate all you do! I watch from this account and my husbands on tne tv lol
I love your vids, nobody business what you eat or feed your kids! We do what we can. Ive got to figure out my last 2 shops to see my jan total but o believe was under 250. I dont budget in nonfood items. I mostly buy dairy, breads, snacks as we raise our own meat and produce. But get fresh produce and fruits during winter. I am discovering january is not the month for me for a pantry challenge...i like doing it in August myself. As our garden is in full swing.😊❤

I see the purpose of a pantry challenge but I cook from my pantry and freezer already. Every month I do a big replace what I used shop plus weekly I catch the sales. I never pay full price for meat or cheese. On Friday afternoon I stand in front of my upright freezer and see what proteins wave at me and ask to be used. Then off to the store for milk and fresh produce and that one ingredient I don't have stocked to make what I want to cook. I manage to feed two of us 3 meals a day with variety for $300 a month that way.
I love this! Such a great system, especially intentionally standing in front of the freezer weekly! Keep doing exactly what you are doing, because it sounds like it works for you two for sure!

You do great being in the public eye. I was the wife of a principal but not a pastor daughter or on here. I thought just being a principal wife was hard enough. Maybe next time, just share one meal out of the week with the recipe. Example sheet pancakes. I did my challenge like you. Even at 63, you have taught me so much.

And as a former teacher myself, I know (like you!) what a good principal looks like, so I just do my best to support Andy in all he does. And you are right! One recipe at a time is more manageable. My pantry challenge didn't go as planned. The snow we had kept me housebound for 4 days and then I had to work extra so i ate out more. Then I had dental surgery and wanted a different sort of food for recovery so I shopped for that. I will be trying again next January but for now I'm going back to shopping the sales and eating from my stored food.😊
Some weeks - and months - just don't go according to plan! Good for you in pivoting. I think shopping the sales and eating from what we already have is the most practical way to shop, and the easiest to sustain long term. So I am right there with you. Back to shopping the sales! Yay!
Such cute hair! Doing a pantry challenge /low spend month. Like you we don't live on a farm so I'm buying veggies, fruit, dairy, eggs and any amazing loss leaders. I am trying to clean out my freezers so no frozen proteins. Going to restock on some frozen fruit and vegetables though. I find a month is pretty ok, month 2&3 meals get more interesting and creative. Our favourite way to use up leftover bread is the Pioneer Woman's Overnight French Toast. I usually bake it as soon as I get it all mixed up, just mix the bread and egg mixture really well together. So yummy! And it lasts us for about 3 days of breakfast so that's a win too.

Great job!!! I still continued to buy things on sale this month but really focused on using things up. There is only two of us so it takes a little time. I learned that there are a few things that I buy when they are very cheap but we don’t really enjoy them. (I’m looking at you, Betty Crocker scalloped potatoes!) So I donated the other two boxes and won’t be repurchasing. It was also fun to figure out ways to use little dibs and dabs of things rather than just tossing them.

I did the challenge but I wouldn't share my meals ... too much judgement on the internet. But I was very pleased with how much money I saved and was able to divert to other goals. I plan to do at least another month as I have some things I need to use up, but may stop at that point as my anxiety about what I anticipate happening with prices and availability is increasing so I may pivot and not finish the no spend winter. One month at a time.

Great job! An idea for next year is just a community post or a “short” of pantry challenge meals. Just a still photo as plated or a voice over pics. It may be less disruptive of family time. But we loved seeing everyone!

I think my goals were similar to yours, but my results were a bit different. My goals were to cut my grocery budget in half, eat through my freezer (mostly meat). make a dent in my pantry, and lastly, learn where my "holes" were. I did cut my budget but not quite half, did a great job eating meat in the freezer that had been there for a bit (and learned some new recipes!) and absolutely found some "holes". I feel I did great in stocking sale items, but it appears there are items that we use often that aren't necessarily frequent sale items, my plan moving forward is to take part of my monthly grocery budget to stock up on those items, most likely at Aldi since they are usually the best price, and of course, stock up on the sales. My thought now is to do this again probably sometime this summer, curious to see how my results are then! All in all, an interesting experience and worth doing.
I get 26 paychecks a year. I use those two 3 paycheck months to really stock household goods, pantry items. I only buy on sale or coupon. Period. The only way to save $$ is to stock when discounted.

I think your plan to start stocking up more on the staples that you use regularly as well as the sales is an incredibly smart one! You learned a lot this month. Good for you! Oh, and any savings is good savings in my book!
