meal for one #13 (Kimchi Stew:김치 찌개)

- Hi! i'm back with a short and simple recipe~
(NOTE: Doenjang and Tojang are both Korean soy bean paste but commercialised Doenjang you find in supermarket is lighter in colour and milder than Tojang - which can be found in certain shops, it's more pungent than Doenjang but slightly milder than Cheonggukjang flavour wise)
Kimchi Stew | 김치 찌개
150g pork belly (marinate in mirin)
500ml water
1/2tsp of dashi powder
150-200g of kimchi (if you have aged kimchi, it's better to use that)
Korean pepper flakes, as much as you want
1 spring onion
2 cloves of garlic (or more), minced
ground white pepper
1.5 tbsp of sake (this is optional)
sugar (if you find it too sour for your taste)
Steps:
1. marinate the pork belly
2. put all of the ingredients into a pot (beside the pork, garlic, green onion, sake, white pepper)
3. boil
4. sear the pork
5. put the pork into the pot
6. cook for 40min-1hr
7. add sake, white pepper, garlic and green onion
8. cook for another 15 minutes (or until it's reduced to your liking)
9. serve and enjoy~
