Georgina attempts to cook: I tried to make a lemon cheesecake

    Cheesecake Recipe:
    Ingredients
    110g digestive biscuits
    50g butter
    25g light brown soft sugar
    350g mascarpone
    75g caster sugar
    1 lemon, zested
    2-3 lemons, juiced (about 90ml)
    Method
    STEP 1
    Crush the digestive biscuits in a food bag with a rolling pin or in the food processor. Melt the butter in a saucepan, take off heat and stir in the brown sugar and biscuit crumbs.
    STEP 2
    Line the base of a 20cm loose bottomed cake tin with baking parchment. Press the biscuit into the bottom of the tin and chill in the fridge while making the topping.
    STEP 3
    Beat together the mascarpone, caster sugar, lemon zest and juice, until smooth and creamy. Spread over the base and chill for a couple of hours.

    We DEFINITELY need more cooking, this was very entertaining!! Who needs therapy when you can just beat the heck out of some digestive biscuits 😂😂😂😂. Definitely cheaper than the £40 a session that I pay 🙄 x

    I'd recommend looking into 4-ingredient recipes because they're mostly cheap, easy to make and are popular! Mars Bar Slice is one of my favourites.

    You need more than 1 lemon for a good lemon taste. I usually use up to 3 lemons depending on the size and amount of juice.
    Just whip everything together, you can add condensed milk too and pour on top the biscuit base. Yum

    When baking I always tend to to use Jane’s Patisserie’s recipes, she has some great ones on her site.

    Tip for next time: take the ring of your baking mold, put the parchment paper on the bottom of the mold, put the ring back on trapping the paper in between the two parts, trim the edges. You're welcome :)

    I've tried this cheesecake recipes before. I found the biscuit base was way too thin and the topping too thick, so I add double the amount of biscuit for a thicker base.
    I also use 2-3 fresh lemons (i personally think fresh lemon tastes better than lemon juice). Taste it as i go alone to make sure its enough before putting it on the biscuit base. And salted butter is nicer, gives the base more flavour. But more unhealthy 😂
    It looks delicious though, well done! It's making me want to bake!
    I always use the left over mascarpone to make lemon, salmon pasta. It's really tasty.

    Since you have lemon juice and sugar, perhaps you could try lemon bars. Or....maybe something with lemon and blueberry.
