  • German Bread Dumplings are the Best!! If you have never made German Bread Dumplings before you are in for a real treat. Super easy, super delicious and so good with leftover turkey gravy. Bread dumplings are made with any leftover buns, or bread. Next time I make this recipe, I'm going to use leftover pretzel buns!     German Bread Dumplings
    4-6 slices thick cut bacon
    1 medium onion
    6-8 rolls, buns or bread at least one day old
    8 oz milk (maybe more, maybe less)
    3 tablespoons butter, optional
    3 eggs
    1 bundle fresh parsley
    salt to taste
    Cut bacon into cubes. Slowly fry the bacon cubes in a pan. Don't discard the fat, you
    will need it in the dough. While the bacon is frying, chop the onion and add it to the
    bacon when it's almost done. Sauté until onion is tender.
    Cut the rolls (or bread) into cubes, about the size of a cherry or a little larger. Chop the parsley.
    Place the bread cubes in a large bowl. Add the bacon, bacon fat, onions and parsley. In a small bowl, beat the eggs. Set aside Heat the milk and butter if using, in a microwave safe container until milk is warm. Meanwhile, heat a large pot with salted water to a boil. Whisk together eggs and milk. Slowly add egg/milk mixture to bread mixture. Stir with a large spoon and then start kneading it with your hands, Mix very well! Form mixture into dumplings of the same size. Make sure to press the dough together while forming, so they won't fall apart. Remove the boiling water from the stove. Carefully add the dumplings to the water - one by one. Put the pot back to the
    stove but reduce the heat, so it will only boil a very little bit. Dumplings are done when they float to the top and are firm. To test, remove dumpling from water, Insert a toothpick Into dumpling. It If comes out clean, it’s done. Serve with gravy.
