I was thinking about a sourbratin snichel lobster tail asian style marinate and some freeze drying limbuger dust then adding bourbon and brandy to soak then bread to make a flumby losbster tial

Can you take the meat out of the shell first, would that be just as good? Iv seen a lot of videos where the cook seasons with the shell on and i don't understand why, is there a reason?
Leaving the shell on help lobster meat stay moist and tender! Shell protects the meat from drying out and most restaurant cook it that way and also look better on the plate with shell on. Remove the meat first can risk overcooked easily or become chewy and rubbery. If you deep fry with thick flour batter then you can remove shell cuz thick flour batter will protect lobster meat from drying out. I hope this help my friend
