Phu Quốc island is granted a special status in terms of immigration. It’s similar to Jeju Island in South Korea where foreigners who would otherwise need a visa to enter South Korea, can enter Jeju visa-free if they remain on the island and won’t plan to travel to other parts of the country. Most foreign travelers don’t need a visa to go to Phu Quốc if they come in and leave on direct flights to and from Phu Quốc, without transiting in other parts of Vietnam. If someone wants a visa to visit other parts of Vietnam as well, e-visa is an easy option (if you don’t have one of those passports that allow visa free travel to Vietnam). Chris, as a person of Vietnamese origin, you’re eligible for visa exemption. Just need some paper to show you were born in Vietnam or originally from Vietnam and apply for the visa exemption certificate at a Vietnamese embassy or consulate. Your wife is eligible as well but as a South Korean citizen, she can enter Vietnam visa free anyway so it’s probably not necessary.
