The first time we ever see a Kai in battle. We never even saw King Kai spar with Goku when Goku first went to him. So while hopeless Shin gave a pretty good demonstration of what a Kai can do and why usually no one ever messes with them.
Buu on the other hand is just insane. I mean, think about it. He just took out Gohan and the Supreme Kai after just getting out of bed, and you know he's not even trying. This is like someone on autopilot before they had a cup of coffee in the morning for Buu.

I know Trunks is a kid, but really. I mean, use your head. Who could possibly know Piccolo to make a statue of him in the middle of nowhere? Piccolo is the guy who enjoys his meditation, he hates being in the spotlight.
00:43 Gohan tries to recover from Buu's knockout and now threatens Shin. Buu simply hit Shin in the head with both hands and simply hit him and he flew down but came back with a new attack. Unfortunately Shin has no chance against the demon but he keeps trying. Shin and Gohan are completely beaten by Buu and lie unconscious. None of the attacks have done the demon any harm. The demon has no skeleton, it consists only of materialized mist that flew out of the split ball. It has a body like bubble gum that instantly deforms after any attacks. It is unbeatable at the moment.
12:04 Buu probably wants to eat Shin or absorb him and when he absorbs he takes his power. Something pierced Buu's stomach but it didn't make the slightest impression on him. Dabura finally woke up and attacked he realized that this was pure evil and he would soon be transformed into a cookie and eaten and his power would be in the demon's body. Even if he spits on Buu it won't do anything at this moment all attacks fail.
13:30 Goten and Trunks have flown in and are watching the scenes involving Buu from afar. They notice the petrified Piccolo and Krillin and are about to cause some mischief and destroy the immobilized friends.
16:40 Dabura tries to talk Babidi into the demon's terrifying power. They themselves will be destroyed soon after, it's only a matter of time.

Of Goten and Trunks don't understand the concepts of danger and death. At least, not yet. They are only what, 8 years old.
Finally Shin did something, otherwise Gohan would have died. With so little Gohan was eliminated. Dabura at that time was no longer controlled by Babidi I ask why he rebelled.

To be fair he is the only one who has seen Buu fight before. So he had some idea of what to expect and while not sure what, if anything, would work he at least knew what wouldn't and what to try to avoid. Like when he told Gohan to watch out for his blast. He knew from witnessing it first hand what Buu's blasts could do.
He also somewhat understands Buu's psychology. Notice how at first he wasn't trying to act threatening to him. Even trying to just talk to him "Do you remember me, Buu?" Buu wasn't trying to harm him then. At least not at first. I also don't think Buu was even attempting to go hard on him. He was more or less playing with Supreme Kai. Gohan just kept going at him all wild just asking for Buu's wrath and got it.
