There are dishes that only have to be made with turmeric as the spice and they won’t even taste good if you used saffron instead, but there are dishes that only saffron can hit the mark, so if you’re substituting it with ground turmeric for everything then you’re missing on a lot in your life! actually it would considered cheap and offensive in Iran!
You eat raw herbs with meals. Also, torshi comes in many flavors, eggplant torshi,garlic torshi,pickled cucumber etc. It is mezeh as side dish with certain foods.
