    What’s the purpose of putting them in freezer before frying ?

      Is optional but I like to let dry a little bit before I put them to fry so many years
      I have been making egg rolls and I have been noticed that after finish wrapped the egg rolls then we put in freezer for a while and when we took out to fry the egg rolls seem more crispier

    Any particular reason you add vinegar and sugar in the water to wet the rice paper?

      We used vinegar and sugar for color and crispy
