It's just that more and more games are multicore optimized and that should be the case more and more in the future. We have waited years for the developers to work on the performance of their multi-core game, we are not going to complain now that they are doing it :)
This video is clearly flawed. GTA V is poorly Multicore optimized and stops scaling after 6 cores. There is absolutely no way that this old Xeon CPU with 3200mhz is faster than a modern 10400f. Even with its turbo unlocked. Also in Cyberpunk the 10600k with 6 cores is exactly as fast as the Ryzen 3900xt with 12 cores, which goes to show that Cyberpunk stops scaling after 6 cores either. The 7 years old Xeon having superior gaming performance than a Ryzen 3900XT is unlikely.
I'm currently using the 2696v3 (Bios Modified) with the 3070TI. The bottleneck is only within the tolerance range with the mod. Without it, the 3060 would be the better choice.

Those all processor can easly run all games. Video just shows difference between mainstream CPU and server CPU (which can be cheaper but also better)

It most likely comes down to RAM. He is using quad channel with good memory and timings.
