Shelby, you are so kind to take the time to share such wonderful recipes with us. I know you have shared with us your full house which tells me you have a LOT going on behind the scenes. It is so nice to see you in person too. Hope you have a blessed week.
Awe thank you. I struggle with meal planning, so it helps to do the videos. It keeps me on my toes. This week Ken and I both have "procedures" scheduled so it is going to be a busy week for sure. Thank you for the kind words. Shelby
Cynthia you are always so sweet!!! First thing I am going to make is some chili rellanos, Ken LOVES them. Then some green chili enchiladas YUM :D Shelby
We are so lucky, we have a friend who drives to New Mexico every year to get Hatch Chilies and he brings some back for us too!! Love your meal plan, love salads and plain old lettuce and tomato gets old so I will be adding your berry and wedge/cobb salads to our menu plan over the next couple of weeks!! My big goal.....that horrid corner lazy susan cabinet in my kitchen that things disappear in, I want to turn it into a baking cabinet for all the baking I plan to do for the holidays!!
Blanche that is a great goal! Think how nice it will be when it is done, sometimes starting is the hardest part. hahahaha You are so lucky your friend brings you chilies. What is your favorite thing to make with them ? Shelby
Chile Relleno!! My Mother In Law made the best chile relleno (the incredibly bad for you but oh so good kind) so I've only done her recipe a time or 2! I need to figure out how to make it just a little bit healthier!!
OMG!!! EVERYTHING looks DELICIOUS!!!!! Thx for sharing!!! I'll have to watch the rest of your video after I make dinner!!! I'm ravenous after seeing the dinners you prepared!!! XOXO
Love the meal plan. Sounds so scrumptious. I always plan my holiday meals ahead of time. Anything that I can prepare and freeze is done. Meals that can be pkg and put in the freezer is a definite destressor. If it can be simplified I'm on it. Nice job. Loved it. Thank you for sharing. Have a wonderful day. :)
Yes Pam it is a destressor to make things ahead. When I was younger I was so busy that I had to do things ahead, now that I'm older I have to do it well because I'm older. LOL I found this recipe on pinterest, it is a technique to roast a turkey breast in the slow cooker. I made it the other day for sandwich meat for the kids lunches, and it is a winner. The meat was very moist even though I didn't brine it. I'll share it soon, next time I roast a turkey breast. This week we have them on sale for 99 cents a pound. So I am going to get some for the freezer, that is how good and easy the technique was. Shelby
Thank you Michelle, I struggle with meal planning so doing the videos helps me keep motivated. Our house is a disaster when I try and wing it. :D Shelby
I have a big huge thing I've been putting off. This is the week!! Thanks for the encouragement. I love watching your meal plans. Thanks for doing that! (and your brat to bun ratio thing made me want to watch Father of the Bride!)
Karen I hope you get your Big Thing off your to do list, it is always harder to start the project than the project itself. I want you to know Ken messed up the bun to brat ratio when the kids cooked brats for lunch the other day, he said he didn't want the carbs. I'm like, DUDE your eating a brat, just eat the bun.......the kids piped in, the bun count is off now Dad.....way to go. :D SHelby
I get so excited when I see that you have uploaded another video. I bought butter on sale last weekend and will be making chive butter for potatoes, dill butter for fish, and berry butter for English muffins and freezing. I had only made dill before so thanks for opening my eyes to the possibilities!! Keep the videos coming Shelby. Take care!
Awe thanks Carol. Great find on the butter sale, I love compound butters. It is a great way to preserve fresh herbs and always adds a burst of flavor in cooking. My all time favorite is the garlic butter. Shelby
I always am happy to see a new vid9from you. Those peppers look amazing. I've never had persimmons, I hope you share your bread recipe I'd really like to try it. Holidays are coming, let the planning begin. Thanks Shelby.
Oh, Shelby, I had a wonderful dinner last night. I sauted some mushrooms and onions then added some cream then I put it over a baked potato. DELICIOUS!!!!!!
I love your meal plan videos. I told a friend about your channel. I really like this week cause this is how I eat. Some of my favorite foods are berry salads, tacos and baked potatoes. I had loaded bk taters twice last week for dinner. Keep inspiring us with amazing content.
Marie baked potatoes are an unsung hero, my kids love them. I usually do a big tossed salad ad dinner is done. It's a fun dinner because everyone adds whatever toppings they want. I think going into fall/winter I will make different style Tacos or Mexican food once a week. Thank you for the kind words of encouragement. Shelby
Awe lucky you, I love the smell of chilies roasting. My mom made the persimmon bread for years and years, at least 60. It is a great recipe, I try and make it at the holidays. I'll share her recipe when I make it. :D Shelby
I am from New Mexico, and yes chile sells out quickly! Nothing like NM chile. My one thing to do is to clear the laundry chair that always has the clean clothes hanging out!
NICE Andy. Just think if we do ONE thing that we have been procrastinating each week, by Christmas time that is a lot of things crossed off the to do list!!! Good Job. I agree, there is nothing as good as New Mexico chilies. :D Shelby
Your meals look wonderful! Sorry the holiday season stresses you out - I'm being selfish and looking forward to your holiday meal videos!! :-D I enjoy the Fuyu (I think?) variety of persimmon, the firm ones that you eat like an apple. They're usually about $1 each - I gotta get going on growing me a persimmon tree!
You and me both, persimmons are expensive! This year we have been so busy that the holidays has just crept up on me. Usually I'm done Christmas shopping by this time, but I have an idea what I'm getting the boys. I only have one gift purchased. Yikes, better get my behind in gear. :D Shelby
Luv luv persimmons in smoothies such a treat so I’ll be anxious 4the bread recipe and yup it’s bout those buns baby!!!! Great meal plan as alwayz Shelby what up Ken
Denise the boys made brats on the grill for lunch one day, apparently Ken decided he didn't want the carbs so he didn't eat the bun. He messed up the bun count! hahahaha Shelby
Leslie they are the Hatch Chilies from New Mexico. Ken and I would get them in California towards the end of August. Girrrllll you haven't lived until you have a chili rellano made from them. Ken doesn't need to buy me flowers, he can just order some chilies hahahahaha :D Shelby
HAHAHA! That's cute!!! I need to try those! Do you know that I've never had a Chili Relleno. I'm going to have to put that in my calendar for next year! Sounds delicious! I'm looking forward to some tamales as the Holidays are approaching.
Wonderful video, Shelby!! I just adore you and you are so creative. Hope everything is going well for you. I am praying for your Mother and you. Thank you for sharing all you do!-------------Tressa Daigle
Thanks Tressa, say a prayer for us. Ken and I have tandem colonoscopy scheduled Friday. My doctor has been threatening me, I'm 5 years over due. Ken said he would do it with me. Now that is true love hahahahah. TMI I know but I knew you would get a giggle! :D Shelby
Love Hatch chilies! Our grocery store had them this summer. They were roasting them outside and the whole area smelled wonderful! I was raised in NM so I really do miss them. I made the garlic compound butter that you had shared and want to get several others made before the holidays. Thank you so much for sharing all of your great recipes and cooking tips. Persimons...... I have never tasted them. Are they sweet? Looking forward to a video on how to make the bread. :)
Pam for turkey i use a lot of garlic, shallot, fresh rosemary, fresh thyme, fresh sage, a little lemon juice and zest, salt, pepper, and smokey paprika. I put it under the breast skin when roasting the turkey. Delicious combo. I would have stayed in the parking lot at your grocery store and smelled the Hatch chilies all day, LOL Persimons are a bit bitter but they make the BEST bread ever. Shelby
Thank you for telling me to “get that one thing that’s been nagging me” done. I love putting things off but that was the extra push I needed to stop sitting around haha
Good job! Sometimes it is harder getting started than actually doing that one thing. Afterwards it feels so good to know you got it off your to do list. :D Shelby
Girl I about needed some depends when I saw your zipper face OMG I would love to just hang out and have fun! :D Shelby PS Hope your mom had a great birthday and you guys had a romantic anniversary. Ronny had me cracking up....
TheQueensCabinet lmaooooooo yes it was a mess lol! Me drinking a whole bottle of wine didn't help either lol! Thank you sooo much!!! Me too! I'm always down for a good time.
TheQueensCabinet I'm gonna go get a few more bottles and actually sit and do your tag vid. That was my last bottle of moscato. It's crazy I usually have a few in the stash but there's only red left. 😩
Hi Shelly. I am back inTN. My daughter had an ectopic pregnancy. She had emergency surgery on Sunday. I have been here a week already. Not sure how much longer I will need to be here. Hope you are well. Loved the encouragement to organize weekly. Love your vlogs. Joy ❤️
JoJo I'm sorry to hear that. Your daughter is so Blessed to have you while she is going through this! You are a great MOM!!!!!! Ken and I miscarried twins and that was one of the hardest things I ever went through, and I was Blessed to have my mom and Ken's mom. You're presence is not only encouraging but is leading by example. Well done JoJo!!! Love you Shelby
Hi there! I don’t know where you live, but asian grocery stores have permissions in a box. I believe it’s either 12-16. Under $20. Hard ones and soft ones. Hope this helps.
OMGoodness thank you for the suggestion. There is a large Asian market Ken and I go to in Albany, it would be worth the trip. Thank you so much for posting!!!!!! :D Shelby
I really enjoy you meal planning video I’m try to incorporate meal planning large family with different dietary needs Wonder where get meal planning sheets
I bought them from CarrieElle.com years ago as a 5 dollar download. She still sells the downloads and also sells meal planners. I got my 5 bucks worth for sure, I just print as I need. It was a whole variety of things, I like the special occasion meal plan sheet that is also included. Shelby
Love your videos. Girl, one day I hope you show us your freezers, I bet they are huge. So many great Idea's come to mind when I saw you make compound butters. Wish we had sales like that, to buy one box, four sticks of butter is almost 14.00 here. That is a huge hit to the budget for me.
OMGoodness 14 dollars, Teresa my heart just skipped a beat! I can't even imagine paying that much, where do you live? In 2010 Ken and I read articles in Forbes magazine and Money magazine both talking about how food prices would quadruple in the next 20 years. I thought it was crazy. They sited population growth, emerging economies, global warming (with every increased degree of temperature, food production is decreased by 10%), and water shortages. Recently, we saw a speaker talk about the enormous global caloric shortage in ten years; China, Africa and India are going to be in dire straights. Elsewhere, food prices will soar. Never in my lifetime did i expect to see food scarcity on such a large scale. I have been working on getting our freezer prepared for the winter, will gladly do a freezer video. Shelby
I live in a very small town compared to most I guess, I am in the mountains of Virginia southwestern part. The local grocery store here, I have only been in it once or twice. Food City is a joke, they are way over priced and we have no competitor to offer better prices. I travel about an hour or more just to get to the closets SAM'S club, which in another state, and their tax rate is over half what ours is. So I end up paying for that as well. Yes, I think we are all going to be hurting soon. I have seen prices soar, and income decreased in our area. That old saying, Highway robbery, that is a true and honest statement.
Here in Texas at my grocery store they have an area in their parking lot where they sell and roast the Hatch peppers end of summer. I got about 25 lbs and they roasted them while I watched. It only took a few minutes. They poured them up into a large thick plastic bag for me and they were still hot. By the time I got them home the black skins had almost steamed off. It was pretty easy to wipe off the char and I packaged them about 5 per package in food saver bags also. I think I paid 11.00 for the 25 pounds. Really cheap. I've made chili rellenos which were awesome. Do you have any other recipes using these Hatch peppers that you can share? I have a freezer full and would love some more recipes.
Wilene that is really cheap!! One of the ladies posted a recipe for green chili enchilada sauce, I will do a video on it. It looks great. Shelby READY IN: 35minsYIELD: 2 cupsUNITS: USINGREDIENTSNutrition1tablespoon canola oil1⁄2cup finely chopped onion2cloves garlic, minced2tablespoons flour or 2 tablespoons whole wheat flour1⁄4teaspoon ground cuminsalt and pepper, to taste1 1⁄2cups pork stock or 1 1⁄2 cups chicken stock1cup chopped roasted and peeled new mexico pepper ("or" frozen "or" canned)1⁄4teaspoon dried oregano DIRECTIONSIn a medium sauce pan, saute the onion and garlic in the oil over medium-high heat, until tender (about 3 minutes).Stir in the flour, cumin, salt and pepper and cook over medium heat, stirring, for 2 minutes.Stir in the stock and simmer until thick and smooth.Stir in the chiles and oregano. At this point you may cool, and store in refrigerator, covered, for up to one day.To serve, heat thoroughly. Celina I bet that is a fantastic soup! My favorite tacos are these potato tacos we get in LA, OMGoodness they are old school but soooo delicious I bet the soup has the same flavor profiles. Shelby
OK Tia I hope you knock out the laundry room this week. I find after I finish a project I have been putting off, it is getting started that was the hardest. Ken said what is one more family member hahaha Shelby
Omg Girl how do you package your purée that way?? I have the seal a meal!!!The hatch peppers are they like the mild green peppers I buy in a jar ? In the Mexican isle...I use them a lot I The winter for Chili etc. Those would be to many at one time for us...I’ve always wanted to know how to make a home made Chili Relinao We have to go to Pancho’s Restaurant I really don’t like going there it love the Relianos How ever you spell it lol 😂I’m a American Hee Hee 😜 TTYL Shey
Shey I just put the puree in the bag and as soon as I see the air is sucked out push the seal button. The hatch chilies are mild and great for chili rellanos. Shelby

Bonnie mine is a food saver and it is one of my favorite kitchen items......along with my mixer, and freezer. I order the bags in bulk once a year, you get better deals the more you order. It also has an optional jar attachment that you can seal mason jars with. Shelby
Baked potatoes for dinner? my hub and son would go where's the meat? I could do with it though. Salads look delish, but hub would crab its not enough. Everything looks wonderful to me.
Thanks Beth. How is your house coming along? We got some of our furniture delivered today, still waiting on two chairs and dining room table....sigh. SHelby
When I saw your rolled tacos I ironically thought of green chile sauce. Here is a good recipe: www.google.com/amp/www.geniuskitchen.com/amp/recipe/traditional-style-new-mexico-green-chile-sauce-28467#ampshare=www.geniuskitchen.com/recipe/traditional-style-new-mexico-green-chile-sauce-28467 Put some on your rolled tacos (kind of a generous amount) with the lettuce tomato and cheese and you will love it! It is served a lot around here in New Mexico. You can use the sauce to smother burritos as well. Mmmmmm! Thanks for the videos!

Shelby

Glad you got to spend time with mom, and had fun wrestling with those pumpkins. The chili rellanos are best freshly made. I'm still trying to recover from last week, I'm loving the time change though. I watched Kimmys video from She is in Her Apron this morning and started the day off right. Check out her video if you haven't, very inspiring. ruclips.net/video/xVzx9k9zw7A/видео.html

I hate the time change I was up Saturday @ 5:30AM Sunday I was up at 6:00 AM new time!!! Grrrr I wish they would not fall back!! I hate it being dark at dinner time LOL 😂
The vanity was pieces from Kitchenaid cabinets. that is why I like them so much. You can put pieces together to make things like the vanity.
wondering what brand plastic sealer you'd recommend?
SHelby

Now that sounds wonderful, nothing like new furniture. Certainly will make Thanksgiving wonderful for ya
