In the end she changes the lyrics speaking about a new girl taking her place, she wants that for him, because she loves him. But she knows she’s just not “that” girl. She’s just not cut out for marriage, at least not yet. Not with him.
Also, in the bridge it says ‘this dorm was once a madhouse I made a joke well it’s made me for me’ can imply that she has her own problems going on mentally. It makes complete sense too because she stated that the skeptics call her champagne problems which is their way of just saying it’s not surprising if she messes up. Which then connects to what you said about how the fucked in the head part is her mind overthinking
"Pretty soon they'll have the nerve to deck the halls that we once walked through" is talking about how the world is going to move on. People are going to start celebrating christmas and decorating the places they (the couple) spent time together even though in THEIR minds the world is ending.
What I love about this image of dropping the ring in the champagne is that either side could be doing it: the one proposing so that their lover would find it in their drink, or the one ending the relationship by dropping the ring in the champagne and leaving. Taylor consistently and continually blows my mind with her lyrics, images, stage presence, etc. She is the one with the “Midas touch” in my opinion.

Somehow Folklore and Evermore remind me of Paul Simon's post-Simon & Garfunkel but pre-Graceland. It's the story telling and focus on melodies I think.
