Even if you make nothing Jacques gives recipes for, it’s so useful to watch and listen to him cook-notice how he teaches principles to his daughter while she frets about measurements. That’s the mark of real cooking; instinct, confidence and flexibility.
I am an as[piring Chef, attending the Art Institute of California San Francisco majoring in Culinary Arts/Management. Jacques Pepin is on of my favorite Chefs. My mother and I adore him and we watch all of his shows. It keeps us busy in the kitchen, and is a great way for us to bond and spend time together. Happy cooking :) Thank you Jacques and KQED
This episode just warmed my heart. It reminded me when my Grandpa and I would cook together, or draw or pick flowers. Family memories like that are so awesome. I hope she grows up to cherish the time she has with him!
finally got 2 watch that last segment. Shorey is so cute. 2 see that playful interaction w/his granddaughter was very sweet. i love how he planned the chocolate-tasting thing. pretty much ALL kids want to taste the batter, bowl, beaters/whisk, etc. (i STILL do). Shorey is very well-behaved, has manners, & doesn't dress older than her age. reminds me of me as a little kid. i know it doesn't have much 2 do w/cooking, but it's just nice 2 C that they R a normal family just like anybody else. :~D
His daughter is gorgeous she's just nervous around him probably...he's a perfectionist most french chefs are...I remember watching her when she was younger on his earlier shows..

Reminds me of the fantastic days with me and my Father cooking in the kitchen. My Father was a Chef. He also made Wedding Cakes as a hobby. Lovely cooking
I read that les demoiselles Tatin really were two elderly ladies. One of them made an apple tarte, carefully arranging the apples in the pan, adding the sugar, lemon juice and butter, then suddenly realized she forgot the crust. Well, not wanting to waste time, she put the crust on top, put the pan on the fire (she knew the apples wouldn't cook enough in the time it took to cook a top crust). Well the sugar caramelized, she put it in the oven then inverted the tarte onto a plate. A true genius!
This man is a genius. His technique is amazing. This is a chef to chefs. Julia was good at what she did and influenced him as well but this guy is genius. Julia was something else amazing as well. Pay attention to what he says. Watch the way he works. Pay attention to his tools and his work area.
I have been in this business since I was 14. that is 15 years that is most of my life at this point. I can not teach someone to be like me. I can do the things I can do because I spent 15 years doing it......... I cant snap my fingers and make you able to do it too. What i do is what I do it is not what anyone I have worked for or worked with does. I takes a personal drive. Critical thinking not just knowledge.

I love Jacques Pepin. I was looking for a plum tart, and I'd knew I'd seen him make one (or maybe more than one). Just needed some timing.... I'm using a shortcut of using a flour tortilla, another trick of his he used for an apple tart in another show.
I think Claudine can do it just fine with her father's assistance,however you could tell she's very nervous Well she's up against a Master that would make anyone nervous. He's a great teacher but very particular but not extremely critical. She's doing fine at least she let's him know To slow down. In his autobiography "The Apprentice", he mentions that he pitched the idea of having his daughter cook with him on tv. The premise being that she would represent the atypical home cook. Claudine would break the ice and ask questions on why he does abc or xyz when cooking? He could than explain the reason behind it to give the viewers a better understanding of what he was doing and why he was doing it. So Claudine's ineptitude in the kitchen was in a way intentional, as it allowed Jacques for better or worse to use her as a prop on tv.

hmm -…golden delicious ? granny smith the second pie is a better choice … theyre are so many fantastic heritage varietys of fruit to use that we are losing to underuse, support some of smaller varietys, coxs pippen, granny smith, braeburn, bramley, russets etc
if he wanted to raise her to cook, belive me, shed be the best in the world. he probibly wanted her to be a doctor. when pepin started out being a chef was a low status craft, a blue collar job. like being a carpenter or bricklayer. now its a "glamour job", because of guys like him ironicly.
