There are a LOT of ways to extract essential oils, which include those already mentioned here as well as microwave assisted extraction, maceration or cold pressing, etc etc. If you're looking for an extensive list you're better off looking a up a recent review paper on essential oil extraction methods. But basically you can use any technique that'll release the volatile compounds that make up the essential oils (mainly mono and sesquiterpenes) from the plant cells and capture them before they evaporate to the atmosphere whilst avoiding decomposition of these compounds (usually a result of excessive heat) and extraction of other non-relevant compounds such as chlorophyll, for example.
Basically you are at the mercy of manufacturers that may or may not be ethical in the extraction process... If you health is at stake... you probably just want to extract your own oil.
