How To Make Caribbean Chicken Foot Souse.

  • Chris De La Rosa of CaribbeanPot.com shares his way of making classic Caribbean chicken foot souse. As part of the culinary culture of the islands, just about every part of the animal is used, so it's not strange to see chicken feet being used for souse (a spicy pickle), soups, stews and curries.
    Souse is basically a cold soup with spicy elements with a base of pork ears, snout and/or trotters, but for those of you who don't eat pork, chicken feet is a delicious alternative.
    You'll Need...
    1 lb chicken feet (cleaned and trimmed)
    1 scotch bonnet pepper
    2 cloves garlic
    water for boiling the chicken feet
    3-5 cups of water for the souse
    2 tablespoon shado beni (or cilantro)
    1 scallion
    1/2 large onion sliced thin
    juice of 1 lime
    lemon slices
    1/4 teaspoon salt
    pinch black pepper
    1 medium cucumber

    I was born here in America but both of my parents are from Guyana and I remember them making this when I was younger and I love it. I just didn't know how to make it. Thanks for uploading the recipe!

    I learned how to make pig feet souse from my Panamanian mother in law- it's almost the same way except we don't add water instead is lime and lemon juice and we use cilantro. I love this recipe. Thank you for posting it. I'll make sure to try it😊

    hello, this is just wonderful the last time i had this was as a teenager and I am 37 so I am definitely gonna try this and if I am sure you can do this with other meat types and leave it even longer in the refrigerator so thanks a lot my friend. God bless

    Hi Chris I love your channel its very informative. I do like sous but I dont eat pork or chicken feet for that matter. It creeps me out. Can you please do a recipe using cow hoof instead. Ive had it before and it tasted just like the real thing that I could remember but I dont know how to make it. Thanks Chris keep up the good work.

    im guyanese and i do my chicken foot souse totally different i am big on merinating with onion,garlic,all the different thyme and pepper blend together and marinate it with the chicken foot and then everything else follow

    I make this all the time and I really think to my liking I preferred having some green seasoning added and more lime juice so that the marinate is much more full rather than clear but good job it looked great. Much love from TRINI AND BAGO

    marinate for an hour? morelike 5 to 10 mins or eat right away.. we don't do it this way. in the Caribbean. and why cold water. nways it still looks good.

      I just prepared this recipe and noticed mine has turned gelatinous too. Popped it in the microwave for 30 sec and it liquified

      I'm afraid to reheat this dish cause it tends to go bad pretty quickly that may cause stomach aches and diarrhea.. (Sorry I had to say it)

    rice wine vinegar or vinegar and salt in boiling water helps to remove discoloration of chicken feet!
