Water spinach are a creeping and invasive plants. If you plant it on the ground, they are actively grown especially during rainy season. No spesific fertilizer needed. But if you do want, organic fertilizer with extra Nitrogen like liquid FAA is recommended. I think that this hydroponic method is more manageable to maintain their growth from spreading too much. No, it's not. We need two or three bunches like that for two people. They are shrink when you boil or stir fry. They are full of iron, vitamins. Very good. It about $5/pound in Mn.

coir is coconut fiber or coco peat while the seeds are of water spinach (from where I'm from, we call it kangkong).

No need to change bcoz it will be absorbed by the plant. Time to time need to add water and liquid fertilizer.
