I appreciate your RV kitchen. It’s actually very cozy and adorable. We come from such a disposable generation where we were taught that our “things” define us. I have started embracing my well used items and being mindful when I fall back into more consumeristic behavior. It’s actually quite freeing.
Best thing I ever bought for my RV kitchen was the small 900 watt Instant Pot. My favorite way to use it is to throw a meal in it just before I hit the road. When I stop my meal is perfectly cooked.
😮Peppers, garlic, tomato, chickpeas and cabbage are some of my main staples with rice and beans and potatoes and whatever veggies available I add some sardines or herring and call it a feast, and whole wheat pasta and cheese!

Hi Caroline....Peanut butter definitely works in that dish. My cousin was a missionary in Africa for many years. Peanuts are a staple. The thing i thought about the stainless steel bowls. You can use them to mix, store, and even cook in them. You can place one in a saucepan and use it as a double boiler to prevent scorching. So much better than plastic. More versatile than glass.

Each RV kitchen has different measurements, so it essential to measure before heading out for holding containers. As I watch Carolyn grab for ingredients, one thing is for sure, you have to be organized!! I think the longer you are in your RV it’s easier. Knowing where everything is! Loved the soup recipe!!
I live in a 5th wheel (stationary) with an island where my sink is. I have a metal, over the sink dish drainer. I keep clean plates on one side and cleaned dishes that drain into sink on the other which I empty once a day. I love it. I hate trying to get plates into tiny cupboards. Cleaning hack from Mack off Midwest Magic Cleaning. Don’t think of it as cleaning. Think of it as “I’m making it pretty.” It gives a decorating vibe that is fun! It works!
So much fun watching you cook! My pressure cooker snafu--blew up a pot of beans many years ago, the beans got blown all over the kitchen ceiling. Was a pretty funny experience. Coulda been dangerous, but I wasn't close enough when it exploded. And thank you so much for the lovely calendar! I bet you had great fun curating what photos to include.
Leave the root on the onion. Cut the end off the non root end. Peel the onion. Make slices around the onion down from the root. Lay the onion on it's side. You can then chop the onion up without it falling apart.

Another great video! Along the way, I recall you talking about how to clean underneath your stove and I was watching a REEL the other day and this might be a solution for you. Use baking soda, Dawn dish😊 soap and white vinegar to make a paste apply it and let it sit for a little bit and then should wipe off easily. Thanks for sharing your RV life with us!

I use a low watt rice cooker. You can make any "one dish' meal in it. I want to cok more meat free meals. I love veggies, so....I have to try Thrive market.
I just learned that the cast iron set you have is called a 4 way or a 4 in 1, because it had four functions -griddle, pot, Dutch oven and bread oven (largest pot on top). I found (for free at our local transfer station still good shed), a stainless steel Kuhn Rikon pressure cooker. I wanted a glass lid to go with it and was able to find one on their website. It is my go to 4 quart pot now !

I'm kinda plant-based mostly but I still eat organic pasture raised eggs and some cheeses, and try to limit sugar to real maple syrup. Traveling full time does present it's challenges, I have a terrible weakness for truckstop cheese pizza.
Carolyn, you need to use mineral oil regularly on that cutting board, after washing it. The board should not have dark sections, which implies bacteria is growing which could make you sick.

I'm going to try making this recipe this week. Becoming vegan actually inspired me to cook a lot more "from scratch" as surprisingly, a lot of vegan pre-prepared foods are often highly processed, not to mention expensive! I've found since my menopause I crave spicy foods more than ever! I love jalapenos so much I'd put them on my breakfast cereal if it wasn't such a weird combination!

I love your tip about how you store your veggie scraps. Finally, I was one of the winners of a calendar on Christmas. I got mine and LOVE IT. Never heard of wheat grass bowls, that's 😎. Love iron, especially since can put on stove, in oven and campfire. We carry a propane cook stove with us in case too hot to cook inside or stinky stuff like kraut. Thanks Carolyn
Are you prepping? I’ve been watching a lot of prepping channels & have started. Even as a nomad (which I am not YET), I believe it is imperative! Garlic: keeps vampires (& unwanted people!) away! Maybe a heat gun would get that stuff off your countertop? Heat & scrape.
I also use the pot part of an old pressure cooker in my camper! It's a great, heavy-bottom pot. In fact, because I knew that was what you were using I knew that I could use mine the same way.
I personally love the smell and taste of raw garlic, but my roommates hate it for some reason. I will cook my food all the way until it is done, then I will use a garlic press and squeeze in one fresh raw garlic clove to my food and then stir it in and it really improves the flavor of my food.

A tool essential for my kitchen is a Swing-a Way jar opener. ($10) I have arthritis in my thumbs and it comes in clutch very often.

I've noticed that propane cooks hotter than natural gas. I really have to be careful when cooking with propane.
