I do the no rap video method 265° They’re always done in less than four hours. That method lately seasoning, each hour, and the spritz’s build such a wonderful bark!!!
I’m going to throw some on the smoker tomorrow 🔥 St. Louis cut are my favorite I find baby bags take a little bit longer time wise. They turn out good but I just like St. Louis cut better.

I'm going to try your method for removing that membrane. That looks easy. I like the no wrap method too. It works great on my SB.

what about putting bbq sauce on at the end? Is the rub enough or could you add bbq sauce?

Totally up to you. If you like sauce, go for it. We like to leave it on the side, that way people who like it can add it, and the people who don't can have it without!
If you want to cook that sauce in, don't apply it more than 15 minutes before you take the ribs off the grill. It can burn or gunk up if the sauce cooks too long.

So, these ribs did not get flipped at all, correct?
