Why not have a StructuredData component in Strapi and convert to json in your front-end code ? Easier for content editors right ? Or maybe I've missed the point :/

Indeed, that would be the best use case for content managers. The example shown in the video is just to give you an idea that you can actually manage this in Strapi directly :)
