Homemade Velveeta Cheese - Lynn’s Recipes

  • Lynn demonstrates how to make Homemade Velveeta Cheese. You can use this in any recipe that calls for the store bought variety. Very handy and much healthier. From browneyedbaker.com.
    ¼ ounce packet unflavored gelatin
    6 Tablespoons dry milk powder
    1 cup boiling water
    16 ounces mild cheddar cheese, shredded
    Line a small loaf pan with plastic wrap, covering all sides and leaving excess to hang over sides.
    Place the unflavored gelatin and dry milk powder in a blender or food processor. Pour the boiling water over the top and immediately pulse to combine. Add the cheddar cheese and puree the mixture until smooth.
    Immediately pour and scrape the cheese mixture into the prepared loaf pan, smoothing it into an even layer with a spatula. Fold the excess plastic wrap over the cheese, pressing it against the surface of the cheese, ensuring that it is completely covered. Refrigerate for at least 12 hours, until set. The cheese will keep in the refrigerator, tightly wrapped in plastic wrap, for up to 1 month.

    Okay, this is great to know, but one question that I can't find an answer to it this. How does it taste? Well, I'll tell you. It doesn't taste like Velveeta. It tastes like powdered milk. And I have tried experimenting with flavor enhancers three times. I've tried salt, paprika, and even a little lemon. It ended up tasting even less like Velveeta. So it looks right, and melts right, and is better for you, but don't expect it to taste like Velveeta. It won't.

      Velveeta is just too salty for me. This recipe sounds perfect! Can I use it to make sauce for shells and cheese? Do I have to put it in the refrigerator for that? I like sharper cheese for the cheese sauce.

      @@nancyking I have used this recipe and variations for years. Yes use it anywhere you would regular velveeta. My guys eat it plain... its that good. Also you really do need to refridgerate it. I have used sharp and it works. :)

    I have never tried Velveeta. I live in Europe and I can't buy this here. I saw a Crockpot recipe which requires Velveeta so I am happy that I found your recipe. So I can make my own Velveeta with my Vitamix (yes I have this expensive american blender which I love). Greets to you!

    Love doing this... what some call semi homemade. YUM I have used white cheddar and colby too. So many good choices. Im wondering about gouda. Add some salsa and a bit more milk and water for a rich nacho cheese. Nice video. Thanks for sharing ;) Namaste.

    Lynn videos are always great. The recipes she selects are never complicated and always look tasty. She also has a very warm personality that you can see in her videos.
    What sort of effort goes into making these videos? What software/ hardware do you use for filming and editing? How much planning and prep is involved? Do you get help? I've been subscribing to your channel for a long time and would love to know.

      Harpfrmhel Thank you for your very nice comments. My husband helps me with most of the videos. I have started doing a few on my own when he isn't available to film, but he always does the editing and uploads to You Tube, then I add the recipe after he has edited the film and do the editing on You Tube to get it ready to post the actual video. He also takes care of my website. A lot of time is spent in picking out the recipe, typing it for the website and under the video, and then we have to add what we need to our shopping list and get the ingredients and prepare everything for the actual filming of the video. It does take some time, but we enjoy doing it. I will have to check with him about the software he uses and get back to you about that. It is only the two of us making the videos. Thanks for asking.     Wow! Seriously?? That is so cool! So many recipes ask for velveeta, but it's ridiculously expensive here. I have no issue paying lots for good food, but not for store bought velveeta. This is just brilliant. I can use my Vitamix again, and I'll make some for my mother in law.

    This is so cool, and a great way to use leftover cheese from the deli or cheese ends you can get on the cheap from the deli, I will definitely be trying this out as there is a recipe I want to make that requires Velveeta but I do not want all that chemical nonsense and ridiculously high polyunsaturated fat content that goes with it.       +Jamie T Thank you! I have had that for years. I can't remember where I got it, but I think a little local kitchen supply store. I have seen them other places since I purchased it and if you google marble cheese boards with slicer, you may be able to find one online.     So going to make this. I wanna try to make a good Mac and cheese and I've tried to but it never came out well (The cheese always separates when i cook it and it has little flavor) so I was gonna get Velveeta but since I don't know what the heck it is besides a cheese product I'll make this.

      Davon Cantley Here is a macaroni and cheese recipe that I recently uploaded - ruclips.net/video/tMaFFvHskzY/видео.html. This one doesn't require Velveeta, but uses shredded cheddar cheese. It is very good. I also have another one on my channel, Amy's Awesome Macaroni and Cheese, and that one does use Velveeta. Both are very good and I haven't had a problem with the cheese separating.       I know it has been 4 years but the problem with cheese separating can be caused by aged cheeses. (like sharper cheese) try mixing several mild to medium cheese for more flavor.

      T'Rea Criscione I probably would not freeze it because everything I have read about freezing regular Velveeta discourages it because it can change the texture when defrosted. I would say maybe just freeze a little piece of it and see what you think. It may work, I just haven't ever done it before. I hope this helps. ~Lynn

    The more authentic way (and less involved) is to use Sodium Citrate as the emulsifier, which you can buy online.

    Colby, swiss, and cheddar blended all together. That's what Kraft says is in Velveeta.

    Forget the healthy, how much does your version cost per pound? I know that costs of ingredients varies across the nation but you had a certain cost and I want to know what it was. thanx

      Cheddar Cheese runs $4-6/pound depending on whether it is on sale or not, the gelatin packet is less than 50cents, and the amount of dry milk is less than 50 cents as well.

      +Intanius OK folks, the point of my question was why are you making it yourself? I can buy the two pound loaf at Aldis here for $3.99 plus 2% sales tax, the sales tax on food here is only 2%. Everything else is 7%. Their house brand is "Clancys" and taste just like Velveeta, if that is a compliment. I suppose you are making yours without preservatives to justify the time and effort. Maybe you like the taste better than real cheese and that is cool with me, it is after all; your money. I like the taste of the store bought but use real cheese in recipes Unless "pasteurized cheese product" is called for. Cheese is expensive based on the brand you buy. I almost never buy cheese unless it is on sale at Kroger for $2.99 a pound. Thanks for the great video.

    I made it and it turned out great for grilled cheese but when I made Mac and cheese it was not creamy at all. How can I make it creamy?

      I looked it up and these are some of the answers I found that maybe you could try - don't add the cheese to a bubbling mixture, grate the cheese, or maybe add more milk. I am not sure what your recipe is for macaroni and cheese, but maybe trying some of those things will help.

    Ok, I had really high hopes for this. I followed the directions and the the result tasted great and looked just like velveeta, until it came to meltability. The only reason I use velveeta is it's easy & smooth melting, sadly this had mostly the same melting characteristics of regular cheddar.

      I bought a block of cheese and grated it. It was not the packaged kind. The packaged kind usually contains flour or something to keep it from sticking together in the package. It is suppose to melt. Linda's Pantry demonstrated using it in a soup and it did great. ~Lynn

    Lynn, please help... I made the Velveeta cheese, added the ingredients you said and put a 1lb package of shredded cheese in and pureed in my food processor for somewhere between 3 and 5 minutes... it looked absolutely smooth and creamy when I put it in the pan. I put it in my refrigerator and when I took it out it looked exactly like Velveeta cheese, I took a slice and it tasted like Velveeta... I decided to make some cheese dip with Rotel. I chopped it up just like I would regular Velveeta put it in a bowl and added the Rotel to it. I put it in my microwave and once it was melted it was chunky. It didn't melt smooth like regular Velveeta does. .. please tell me what I'm doing wrong! Several years back, my wife and I had this exact same problem using Velveeta cheese that we bought in a store. My wife said it was because they changed the recipe for Velveeta cheese... my other thought was to start all over and use a Crock-Pot to melt this rather than the microwave!... Any advice you could give me would be appreciated!

      I am not sure why it didn't work. I think the crock pot on low or even in a double boiler would be a good suggestion to try.

      @@lynnsrecipes I've been doing a little research about cheddar cheese... I don't think there is any way to recover what I've done to this homemade Velveeta because I think I tried to heat it up too fast.... if you heat it up too fast you separate the oils from the cheese and it kind of clabbers... once this happens there's no recovering from it that I've found. I heated the whole block of cheese in a bowl, of course I cut it up into chunks, in the microwave on high for two minute intervals. I believe I got it too hot on the edges and that's what has caused this. I'm going to try a batch again and try heating it in a double boiler. .. if someone doesn't have a double boiler they can make one on their own by getting two pans out of the cupboard, one larger than the other and putting the smaller one inside of the larger one. I use shish kabobs sticks that are metal to hold the smaller pan off the bottom of the bigger pan... fill the bigger pan up with enough water to cover whatever you're cooking in the smaller pan.... you can turn it on high at first to get the water in the bigger pan boiling, but then you can turn it down to just a small rolling boil. I don't know if this will work, but I will post back if I figure this out... everything about this homemade cheese is absolutely excellent, except for the fact that you have a hard time melting it for cheese dip... If anybody has the solution to this before I waste another pound of cheese, post and let me know!... Lynn, your idea of the double boiler is brilliant! You have no idea how much I appreciate your help! Keep cooking! I have found that I love your Channel and I get excellent ideas from it. Thank you so much for your efforts!...

      @@lynnsrecipes ok, I've found a way to do this, but you have to be VERY careful or you will overheat it and ruin it... First, use BLOCK mild cheddar cheese and grate it yourself to make the shredded cheese... As SOON as it comes out of the food processor is the best to use as cheese dip for chips..... If you have to heat it up, do it VERY SLOWLY!... In a microwave, no more than 15 seconds at a time... If you do it too fast, it will clabbers and it's ruined... You CANNOT recover from an overheated batch... Heat it a little at a time, stirring it REALLY well in between heating and the cheese will remain creamy and smooth!

      Okay, I learned how to heat up the homemade Velveeta... It's a pain in the neck, but it works. If you try to heat it up in the microwave it will separate and Chunk up on you. You want to heat it up on the stove in a pot on medium-low. (That will be two to two and a half on an electric stove)... if you are just making cheese dip, add some salsa verde, or picante sauce to give it some moisture... if you're just wanting to melt it, you want to add a tablespoon of milk or heavy whipping cream. Stir It Well while it's melting and even graduate to a whisk once it starts melting good. Do not overheat it. You will see it turning into creamy melted cheese that you can whisk together... for cheese dip I will even add a teaspoon of minced garlic... You may not like that, but I absolutely love garlic so it's awesome for me. If you're not that crazy about garlic leave that out. Anita and I had some cheese dip with corn chips tonight made this way and it was awesome!

    The idea of this not containing the chemicals in Velveeta is fantastic. However this is not the recipe for casseroles. The milk will extract from the cheese as it's heating up which means it's going to liquefy the cheese then becomes somewhat stringy. I did this recipe for Thanksgiving and I'm sorry I did because I only make broccoli casserole once a year as that is a family's favorite and it was a disappointment.
