    I made these least night with some blueberries, and bruhhhhhh. So FREAKING GOOD! My mom read to combine the cornstarch and sugar then add it to the fruit. It was quite easy to combine. It cooked my blueberries on shorter time since my blueberries were busting open, but it is a softer fruit, so it makes sense. Super delicious. Thank you, Brian!!

    My husband and I love your channel! He affectionately refers to you as 'Bri' as in "Let's watch Bri while we eat dinner tonight" lol Last week we watched the video where you and your wife were having a picnic and you were devouring these little strawberry hand pies. I didn't know this video existed at the time so I told my husband to please make me some POPTARTS for dinner (a poor but necessary substitute on such short notice) But now I can make these pies and I will be jealous no more! Thanks from both of us for your great recipes!

    Given that it's almost December, I used frozen strawberries (the vinegar gave them a nice boost), and I don't have a food processor so I tried using a mixer and a grater with frozen butter and I ended up making a mess, BUT...the crust came out really good anyway, which I would say is a testament to the soundness of this recipe. And even though I did a sloppy job of putting them together they came out looking pretty cute too. I can't wait to try it again with fresh, juicy, full-flavored strawberries next June. P.S. I love this channel. I was getting bummed out at the prospect of another covid winter, but this channel, Brian, and his recipes and videos is a real bright spot. Trying out most of these recipes is gonna be just the fun thing I need to get me through. Thanks, Brian. Love ya!

    My mother made killer apple pie, she grated the apple vs slicing them and always made parm cheese straws out of the pastry scraps.

    If you mix your sugar with the cornstarch, it will dissolve in water much easier.
    Also, re-roll you crust scraps to make more rounds, dude!

    American measurents for pie crust:
    2 3/4 c flour
    1 tsp salt
    1/4 c sugar
    1/2 c water
    2 sticks of butter
    1/2 c cold water
    Filling
    3 c strawberries
    3/4 sugar
    1 tsp. champagne or white wine vinegar
    1 heaping T cornstarch (4 teaspoons)
    1-2 T water to make cornstarch slurry to add into the strawberries.

    The crust-to-fruit ratio looks high which is just the way I like it. I don't like crunchy fruit in a pie, either. I like fruit fresh; or, I like fruit cooked. No 'tweeners. The strawberries you used looked delicious. I love a strawberry pie where the berries are still slightly tart instead of overwhelmed by sugar. This one looks right. Too bad it's January and there's a foot of snow outside.

    I'm with you on tart fruit pies and strawberries are my favorite fruit. Your chump move was leaving the little green bits of leaves in the berries. Leaves are not good pie filling.

    yo this is really great. your pie game is excellent, but the little nuggets of advice are really what makes this great content. the stuff about fruit fillings in pies? my thoughts /exactly/. plus you avoided the American problem of adding too much sugar and salt and just too much flavouring. also, the note about having good fruit is really great, that isn't said often enough, that the supermarket strawberries won't get you very far.

    Life Hack: If you don't have a food processor you can use a box grater on the biggest shred, throw your cold stick of butter into the dry mix and coat it with flour (so it doesnt stick to everything and make a mess), and shred your cold butter into a bowl with your dry ingredients for the dough and mix by hand, it becomes pebbly in a matter of seconds.

    B-man, do you know how big the empty takeout pint container was that you used to cut out the rounds? did I miss that? As in how many inches across. Thanks in advance.

    What if I have a shit ton of fresh but frozen strawberries that I don't know what to do with?

      lots and lots of strawberry jam? for this recipe you CAN use frozen, but if you do they'll need to be cooked down more to get rid of the extra moisture. not recommended, but possible. maybe make and bake the crust, make the filling, and put that on top of the crust? add little ice cream on top?

    Nice to see an American use metric measurements. So tired of the “stick” and the “heaped teaspoon”, the “teacup” and the “thumb-sized” rubbish.
