Animator's Palate theming on the Dream/Fantasy reminds me of budget cuts compared to the classic DCL ships. The "Drawn to Magic" show on the Magic/Wonder is my favourite too especially with Sorcerer Mickey! "You were my dream"!

The tables are all assigned and set before you arrive. On the Dream and Fantasy they have a decent number of screens so you should be ok. On the Magic and Wonder if you are more towards the middle the screens will be further away but you might have a better view of Mickey. Hope that helps.
If you are referring to the drawing activity that comes to life at the end of the meal, that is usually only offered on cruises where you visit Animators Palate twice (so like a 6 night cruise.) So the menu and entertainment in this video are focused on the typical first (or only) visit to the restaurant depending on the itinerary. But the drawings coming to life are SO awesome! Always jealous the shorter cruises don't get to do that.
