For me I wouldn't try anyone's food given to me from their hands(were they washed and clean even if they were) no matter who it is. That's just how I am. Through lessons learned I don't eat from everyone either no matter who it is I will go by my instincts.

There's safety standards that are held at the market, that's why you don't see so many flies around along with clean stalls.
All the food is prepared by hand - be it burgers, Sri Lankan, Portuguese or those tacos and burritos.
