    I really appreciate you don't take sides and make claims like "saturated fat is bad for you" or "don't eat butter".
    There is a lot of information in this video, but no opinions. That's rare these days and I am so glad to see it.

    Great presentation! My only comment is that trans fats are found in nature (8:30), typically in small quantities. Both plants (and not just seed oil plants) and animals contain trans fats. For example, 3-trans-hexadecenoic acid [16:1(3t)] is found in leek, peas, spinach and lettuce. And in animals, 11-trans-octadecenoic acid (vaccenic acid) in found in beef, mutton and butter fat.

    XXI education arises.
    I suffered my engineer bachelor with those dull classes, that can kill anyones attention.
    Under this format, visual attractive and appealing, quick and fluid, strong concepts, etc...
    This lead to expose the truth difficulty of the subject that is actually very low when you have all language elements already present in your memory.
    I'm really happy after enjoyed this video, I will stick to Khan as much as I can.

    One thing that has always puzzled me is whether the location of the "kinks" has any influence on health (plus or minus). Also how does margarine stay polyunsaturated and not be a trans-fat with what must be trans bonds to be solid??

      etmax1 Imagine straight tails of sat-fats being straightly and accurately cut bricks , which when deposited one upon another (inside of a arteries) they "build a wall " which eventually over time becomes a fortress for blood to pass . With kinks of unsaturated fats this brick layering is NEVER possible (they cant seat one upon another like saturated straight tail fats, and that is the reason they are liquid to begin with) ,so they are kind of 'porous' so much that blood easily flows trough them , without any problems for health ! and the benefits of unsaturated fats is numerous ! Now trans fats are ARTIFICIALLY made saturated fats but 100 times more dangerous than all of the natural sat fats combined , at least healthy and normally functioning organism can deal with natural sat-fats , but NEVER can do anything about trans-fats ,it simply does not recognize it !

      Thanks for helping me with this. I do understand the part you've described, the bit that puzzles me is why margarine with it's tightness graphically so close to butter should behave more like an oil than a solid fat in the body??? Besides, both butter and margarine melt at body temperature.

      Are you criticizing scientists for using Latin prefixes that happened to also be used for the words “transgender” and “cisgender”? Also, that’s not sexuality. That’s gender.

      Yes, 'cis' is the Latin prefix for (roughly) 'on this side of' and 'trans' being for 'beyond', hence is used in 'transgender' and 'transfat' though aside from having the same prefix share nothing else in similarity.
