I want to suggest that since you have the space & capital, kindly consider a cattle feedlot in the mix of upgrade you're planning at the farm. Cows take some good time to grow & even multiply, but with a feedlot, you can always buy good variety of grown ones, feed them intensively and sell such that whatever margin you make doing that, becomes your profit & a regular income as well........that is while you grow your ranch to the modern level you desire.

Over 120 acres in all but you don’t need that much to start. What farm are you planning to start?

It's a good decision, but I think you would have decided to do both because I know goats take so many years before they became mature for consumption.
That also depends with breed of the goat. Check the Boer and Kalahari goats. The grow fast
actually goats mature faster than cattle
