Hey, are you aware, that the way you use the filter in the chemex is not ideal? It is recommended to put the 3 layers of paper over the spout, because that reduces the risk of the filter getting completely stuck and creating an air-lock.
This is a super useful trick, and we can swap out the ingredients and create a different flavor profile. You always come through with creative and useful techniques. Thank you sir.
I was so excited to make it I made a mistake - I used pineapple juice instead of syrup. I guess I will add more sugar when the filtration is over. Another liberty I took was substituting white peppercorn for green and adding Sichuan peppercorn for its unique mouthfeel.
Love it! I find it interesting because I've tried making a 0 proof milk punch with coconut milk and it failed miserably, the liquid was clear but the taste was absolutely disgusting. Do you maybe know how you manage to have good results with your clarification, although coconut milk has a low amount of proteins?
