    Looks great! How long did you let the salmon sit in the brine?

      You normally let It sit for 48 hours

      That’s more of a preference question, 24 would be softer than 48 obviously but you can also get firmer flatter fillet by placing something heavy on top of the film while curing in the fridge but isn’t necessary. Additionally you can go past 48 hours imo as we make it about once a month and let it cure past 48 hours
