I have an iaito, wood boken, poly boken, and wooden katana. Flourishing gets easier as you work your way down from heaviest to lightest. Its very easy to spin a wooden katana and looks really flashy, but its actually so light and unrealistic that wind resistance can effect the blade almost like a sail.

Repetitive motion injuries, I hadn't thought about that. I can't imagine how much time "flourishing" would develop into a painful grip. And by the time you actually feel that pain, the damage has already been done - just ask ANYBODY who has ever suffered such an injury.
That said, I still like to flourish a few times a day..
I have noticed a considerable difference in handling with different kinds of swords. Balance and weight are different in each katana style.
Even the Sori angle can make a significant difference with handling.
Bokken don't balance the same, or weigh the same as steel, so I use them mostly just for sparring and striking distance exercises.
I keep a "slab side" sword (without bohi) handy because the balance is so much farther out, and they handle a little bit differently. A heavier sword moves a little bit slower and requires a little more effort to point.
The ol' "flourish" is the fastest and easiest way for me to reset my own expectations - from one sword to another (weight, balance, dimensions, etc.).
You can't be familiar with it, if you don't train regularly with it.
Train and practice regularly. If you enjoy doing it, you won't regret the time it takes out of your day.
