    Wow boss,,,nice looking bird there.
    Great video as always.
    Say I use a little trick with the ends of those legs that may be of value to you.
    I push the bone end of the drumsticks through two very small slits in the skin in the lower end of the cavity. The more you can bend the knee and push the drumsticks up, the better.
    Plus it allows ya to keep the small slits high enough so they don't tear out.
    On bigger birds like a duck for example, you can criss cross the drumsticks to help you truss him as well. If it's a big enough chicken you can do the same thing.
    Cut your little slits high up on that cavity skin and put the left leg tip through the right side and right leg through the left side.
    It really keeps the legs protected and if you happen to have anything in the cavity it save you from having to sew that cavity closed.
    Take it for a drive and see what ya think and please keep up the great work!
    Bill
    😎👍

    Best chicken ever I put corn on the cob in using the pepper salt and garlic with butter wrapped in foil last 45 minutes of the cook it came out great as well the temp of the breast when pulling it out was 170 degrees but the skin looked great this was done on a Dyna Glo vertical smoker with an offset fire box with charcoal and hickory wood chips that were soaked in water for 3 days . Believe mee keeping the temp at 350 for two hours was a challenge but hey it was a lot of up and down adjusting dampers and the bourbon definitely helped the Dawg Fawtha definitely knows his stuff. Wil be doing this again Best tender juicy chicken with crispy edible skin ever!!!!

    I've done many smoked chickens and to me bringing makes a big difference, not saying that yours not perfectly cooked but perfectly seasoned I don't know, I'm just going on what I've experienced when I don't brine or inject. If I have no time to do either I would at least raise the skin and apply season under that and try get it into the the thick thighbone area. I'm just saying as for me that breast and thighs are just to dense for the season to penetrate if just applied to the skin only. Even if I put it in the cavity it would usually sweat away, but that just been my struggle.

    • @TheDawgfathasBBQ
      @TheDawgfathasBBQ  3 года назад +1

      Rarely do I ever brine and I may inject occasionally. Nothing wrong with it at all either. With that said I don't have a lot of problems keeping the bird moist and flavorful either though.
