I know that you think putting sriracha and hoisin sauce is disrespectful but as a 1st generation vietnamese american who grew up with very traditional parents its the complete opposite. One time I forgot to put the sauces in and my parents started nagging saying that its not pho without the sauces for 2-3 minutes. Immediately after my mom gives me the pho she cooked I have to add the sauces. I respect you for tasting it first and I just think its funny how different the west and the east coast vietnamese people think
I totally agree about not adding hoison into your pho before you taste it! People work hard on the broth itself and you get more appreciation of the dish before adding in the extra stuff. Its also a good way to tell if the pho is delicious or mediocre compared to others.

If you ever come down to the Boston or New York we have a place similar for the banh mi or num pang pate for Cambodians. It’s called num pang kitchen if you’re ever interested while traveling.
From the look of the noodles, as a Vietnamese I can tell you that it look relatively what I normally eat back in Vietnam. Pho in different areas have their own flavor and taste, like in the South, it is more sweet than in the North. I think your friend, Linh and this restaurant owners are from the South. You should come to Vietnam and make a food tour!

Pho in Australia typically comes with that flat rice noodle that you had in your bowl, and I think pho tastes perfect with it.
