It's really sad that most anime series nowadays don't use eyecatches. There was something really charming and awesome about seeing these short pieces of animations between each episode of your favorite anime series. Also, in my opinion, Zeta Gundam has the best eyecatches.
I understand why you kept out Victory's eyecatch. But for the likely reasons you didn't, e.i. the fact that its a series of stills that form a short animation when played together, easily makes it my favourite of the franchise.
The same reason they show the Gundam mark II instead of the zeta in the zeta eyecatch first and then the zeta. Because they don't want to spoil what it looks like later in the series and it follows the story.
This just made me realize the most recent thing I've watched with eye catches was "Cells at Work" where two prominent characters for the episode simply say the name of the show after a wipe effect of the main red blood cell running around in a lost panick.
My fave has got to be between the 3rd and 4th Gundam Wing ones and the Turn A ones. Why was V excluded? Is it because it changes every episode? Also, watching this makes me realise 00 didn't actually have one...weird.
If we aren't counting Gundam 00, which I'm currently watching. These are all eyecatchers that I saw because I'm watching all Gundams in release order, mostly. Also not including the things that don't have eyecatchers like the movies and Victory because it is 2 frames of an animation for each episode. What a coincidence?! lol.

My faves were Eyecatch #1 for SEED and, Gundam Wing, and AWGX. The rest were ok, cept Turn A. Turn A should only be watched in the style of MST3K (where you yell call lines every 5 seconds to make it more watchable until near Episode 29).

And then Turn A sounds like Star Trek

What I find odd is that they still show the Zeta for the ZZ eyecatch even after the ZZ Gundam debuted.
I mean it’s still there…
If they show it twice becomes the double Zeta so it's fine.
The Zeta was still the main unit in the early stages of the series before the Double Zeta was introduced.
