I tried this and I substituted the wheat with bread yeast and then added some hibiscus flower petals and honey, I left the strained result in a bucket (yh the traditional way 😂) for a month, I then put it in an empty wine bottle and put in the fridge, it taste so good, just 1 glass has me so buzzed. Every month I'll make 2 batch of this. A glass a day keeps the doctor away 😂

I began brewing by adding sugar to a bottle of unpasteurized beer. Kaboom. Since then I've used beer yeast for bread and bread yeast for beer. Now I follow Clean Food Living for a variety of fermented foods and I use bread yeast, kombucha remaining in a bottle, coconut kefir, probiotics in capsules, leftover pickle juice and so on. I experiment. See too Gundry "The Longevity Paradox..." for the science behind probiotics.

I made this using your recipe and bottled it today. Came out amazing and was sweet with 9.5% Alcohol. I am going to make it again but a bigger batch. This was the least complicated way to make rice wine. Thanks for the great recipe!

You can make it stronger by freezing it and then slow defrost and dripping the concentrated solution while leaving the ice behind. Drink in moderation like half a glass because the methanol not just the ethanol will be concentrated too. But this will be small and negligible in drunk in moderation. So if you have 20% ethanol, 2% will be methanol. 1L will have about 20 ml methanol at most after concentration. 30 ml can cause some serious damage. So half a glass should be about 10 times below the limit and you should be fine.

PSA; If you're fermenting in regions outside APAC/FarEast, may need yeast from those places to engage proper fermentation. Yeast is different everywhere and that accounts for the different fermenting experiences. Example, it's why sourdough bread is great in SanFrancisco, it's the wild yeast there that does it. Imported rice wine yeast like 酒曲 can help for people like me in California.

    • @Druid3ater

It can smell bad during the first phase of fermentation, if it smells bad after all the bubbling stops and the wine has stuff floating in it or on top of it, it might’ve gone bad…search videos on home brewing wine, you’ll have to toss it if it has gone bad, no way to salvage (you could call it “fermented fertiliser” though 😅)
