    Heather’s Stuffing Bread
    • 2 Cups of warm water
    • 2 Tbsp. Instant Yeast
    • ¼ Cup Sugar
    • 1 Cup Whole Wheat Flour
    • 4-5 Cups High Gluten Bread Flour
    • ¼ Cup Powdered Milk
    • 1 Cup Cornmeal
    • 6 Tbsp. Softened Butter
    • 2 Large Eggs (at room temperature)
    • 2 tsp. Poultry Seasoning (1 tsp. Rubbed Sage, 1 tsp. Thyme, 1 tsp. Marjoram, 1 tsp. Rosemary, ½ tsp. Nutmeg, mix to combine. Store the surplus.)
    • 1 tsp. Granulated Onion OR Onion Powder
    • 1 tsp. Granulated Garlic OR Garlic Powder
    • 1 tsp. Sea Salt
    • 1 tsp. Black Pepper
    • 1 Heaping Tbsp. Dried Parsley
    In the bowl of a stand mixer equipped with the dough hook, add the warm water, sugar, yeast, whole wheat flour, 4 cups of bread flour (reserve the last cup in case needed later), powdered milk, cornmeal, butter, eggs, poultry seasoning, granulated onion, granulated garlic, salt, pepper and parsley.
    Combine on speed 2, watching to see how it comes together. Add more bread flour, a little at a time, as needed. When dough pulls away from the sides of the bowl cleanly, set a timer and allow to knead for 5-7 minutes, depending on your mixer. (If kneading by hand, you will need to knead for about 10 minutes after ingredients are combined.)
    Turn out onto a clean surface and knead by hand a few times. Form into a ball. Take a picture for Instagram and Facebook (optional). Lightly oil a large bowl (or the bowl from the stand mixer). Put the dough ball in the bowl, spin to coat with oil and turn over. Cover with a damp tea towel or plastic wrap and place in a warm, draft free place to rise for about an hour to an hour and a half, or until doubled in size.
    Grease 2 bread pans with lard, butter or shortening. Put some cornmeal in the bottom of each pan and shake to coat just the bottoms.
    When dough has doubled, punch down to deflate it and turn it out onto a clean surface. Flatten dough by hand, pressing out all of the air bubbles on both sides. Cut dough in half and form into 2 loaves by pressing out to fit the pans. Roll up tightly and pinch the seam to seal. Tuck in the ends and pinch the seams to assure the finished loaf will be pretty. Place into prepared pans, seam side down, tuck down the ends and press down the dough to even out. Coat tops with cooking spray or oil. Cover pans with a damp tea towel or plastic wrap. Place in a warm, draft free place and let rise for 30 minutes. Preheat oven to 350⁰ F. Bake for 30-35 minutes, until loaves sound hollow when tapped.
    Turn out onto a wire rack to cool completely.
    To Dehydrate:
    Cut bread into 1 inch or ½ inch cubes. Spread cubes in a single layer on baking sheets or dehydrator trays. Dehydrate at 135⁰ for 3-4 hours in a dehydrator, or at a low setting in the oven. Store finished cubes in an airtight container or freezer bag with an oxygen absorber for up to a year.

    Bread cubes look great. We always called it stuffing if it was made with bread. Dressing was made with corn bread, chicken, ground up bell pepper, onion, and celery.

    I made my regular home made Thanksgiving stuffing with nice Tuscan hearty loaves cubed and dry/toasted, then I chopped a couple onions and ground them coarse in my mini chopper, the same to a few stalks of celery chopped coarsely in the mini chopper, I seasoned it with salt and pepper and poultry seasoning, added about a quart of chicken broth and then broke it up into cube/bite sized pieces (not too small) and dehydrated it 24 hours. I wish photos could be added to comments. Then I took the large ball canning jars and packed what each one would hold, placed a 5000cc oxy absorber, placed a lid on it and vacuum sealed each jar. THEN I took my brake bleeder that has the pressure dial that I bought specifically for canning, and I removed even further up to 24 lbs of neg pressure (much MUCH more pressurized than any FoodSaver machine will do, and it sealed beautifully. Guess what? I opened a jar....that was vacuum sealed BACK IN 2014!!!!!!!!!!!!!! And then I reconstituted it with some fresh warm water and let it sit. NOt too much now, you don't want mush. Eyeball it!! And then heated it up in a fry pan stirring so it wouldn't stick. 7 years (SEVEN YEARS) in a vacuum sealed jar, and I had as much stuffing I wanted at the time! Sure beats freezer bags and this works FAMOUSLY!!! Do it right. Keep it dark/cool,vacuum sealed and you will NOT know the difference! Forget those Dollar Store boxes of cardboard stuffing!!! MAKE YOUR OWN !!!

    My favorite part of the whole meal IS the stuffing! I make both stuffing AND dressing - same recipe gets stuffed IN the bird and what does not fit in the bird is dressing. What does not go in the bird does not get the flavorful turkey drippings is all that happens.

      I mix the two batches together once everything is ready, so I guess in the end I'm serving...dreffing? Or maybe druffing? Idk but it sure tastes good! 😄

    Kneady, I made a half batch of your stuffing bread but did it in my bread machine. It turned out wonderful I left out the salt for health reasons but have half put away for sandwiches and the other half drying for dressing! Thank you so much!

    In the south...(Ky) dressing is mostly cornbread. Stuffing is more bread. Looks like you're making stuffing.❤

    Hi Heather..I just received The Ultimate Dehydrator Cookbook from Amazon that you talked about in your videos. I am so excited. I have a small dehydrator right now but working on getting an Excalabur... saving up for it Cookbook was literally delivered less than an hour ago and chapter 11 is already a favorite the different flavors of salts and the raspberry sugar and so much more I Love making rubs and giving away as gifts now I can dehydrate some of the ingredients too. thank you for recommending the cookbook😍

    I had a few issues with this but mostly because we r wintering in an RV. I halved the recipe and left out the poultry season because I was making it for pasta n sauce. Super flavorful but a bit too sweet. Next time I will only add 1tbsp or less sugar. Also I had issue. With it riding but it is very dry here and windy so I will try putting it into the car to proof next time lol

    I have the same dehydrator book and I love it! It's so easy to follow the directions and I can't think of anything that it doesn't have instructions on dehydrating!

    I got inspired, had a loaf of cheese and onion bread maker bread drying out. It became stuffing to day with diced apples, bacon , celery, onion and spices.Serving it with meatloaf and Brussels sprouts on Monday. Husbands birthday menu request, lol

    I make cornbread stuffing and used your idea to add the seasonings to cornbread and baked then dried up the cubes!!! Great idea we had an early thanksgiving Saturday and it turned out marvelous!

    Back in the day, one could buy a hefty loaf like yours, but NO-WAY 'like' yours, it was just dense white bread, and my job was to tear it to shreds putting them in a huge bowl, that would remain uncovered, and air dry well before it was turned into .....[cue the drum roll]...... MOM'S STUFFING! (her turkeys were always 'stuffed' back then, and we all lived to tell the tale! Soo good. : )

    wonderful idea making seasoned sandwich bread. make extra gravy too.I've been making Turkey dinner sandwiches for years and because I love jellied cranberry sauce I add a schmear on the sandwich also. I make some dressing in loaf pans so I can use a slice of it on the sandwich, but with the seasoned bread this may not be necessary. Try using red bell peppers in the dressing instead of carrots.

    Mmmm.....those look good enough to eat! lol! Paul showed a recipe for a 'no knead' dill bread that I will be making soon. I have to ease myself into bread baking!
    This year, I'm going to make bread cubes from a local bakery / restaurant called 'Arnies'. They have an 'overstock' section right at the bakery and they sell their artisan breads for BOGO. Such a savings and so SO tasty!

    I made the bread today and tomorrow i will dehydrate it. My kitchen smelled heavenly. I will have to make more bread closer to Thanksgiving since some want those sandwiches. Tomorrow I will also make whole cranberry sauce to can. I posted a picture of my bread on your IG page. Hope you saw it.

    I can picture you making you and Matt a turkey cranberry salad topped with some of those croutons you could even freeze dry those if you had a freeze drier when I get the money I plan on purchasing one and will let you know how things turn out using it I still will be keeping the dehydrator in the family though

    Dried in a large Tuperware mixing bowl after cutting millions and millions of bread cubes. Covered with a tea towel over night. By the time the turkey is ready for stuffing they should be plenty dry to absorb the stuffing dressing. (Grandma's way)

    Just a quick question. I have the Dehydrator Cookbook and found the "Regular Stuffing Recipe". It calls for the same spices you put in the bread cubes, would I put these in again? 2 T Poultry Seasoning, @ T Parsley, 1 T Sage, 1 T Thyme, 1 T Salt, 1 T pepper ? By the way your dressing/stuffing bread looks amazing!!!! I can't wait to try it this year for Thanksgiving. Thank you so much. I am also going to try The Honey Maple Oat bread next. I love baking bread. You are looking fabulous by the way, way to go girl!!!!

    I have a different dehydrator but it doesn't have the temperature it only tells me low medium and high no degrees could I use that for dehydrating my bread for my stuffing

      Always taste it, you would probably need to add slightly less than you would have otherwise. But you’re adding dimensions and layers of flavor by seasoning every step of the way.

    As I understand it, we northerners call it stuffing because so many of us stuff our birds with it. Down south they always serve it on the side to "dress" the turkey so they call it dressing. But whatever you call it, it's the yardstick for how good the meal is! My aunt made the worst stuffing I've ever had and I remember my family agreeing that it ruined the entire meal. The whole ride home it was all we talked about lol. Everything on the table could be subpar, but if the stuffing is awesome, that's all anyone will remember! 😄
    I hope you post a video of how you prepare your stuffing, Heather. I've always used store bought seasoned cubes for mine, with butter, celery, onions, sausage and turkey or chicken stock. And eggs! (Had to edit that in, can't leave out the eggs!) This year is no exception since we're having our Thanksgiving dinner tomorrow so there wasn't time for me to change my menu after I saw your bread recipe yesterday. 😭 But I WILL be making it before Christmas! Also would value your input on krylo-sealing the cubes; do you think that would work without any additional moisture control? Also, how long do you think they would keep? Btw, I was telling my bff/aide about your recipe for stuffing bread and she can't wait to try it when I make mine. I may be supplying hers from now on too!
