Gus left cause he didn't want another person getting hurt, just because they got close with him. He never had problems betraying, hurting people who are there for purely rational reasons. Yet, I think it gutted him to see people who were with him, cause of pure feelings, getting hurt. His family, Max. Person can only take so much pain. I am sure he was also afraid that happiness would make him less focused on his ultimate goal.
I think it's more about how his self-imposed quest for revenged left him as a joyless man who lost the ability to enjoy anything. He couldn't be friends with Mike. He couldn't go further with the waiter. And he couldn't enjoy that bottle of wine.
