      Marty, without the bones the chicken wouldn't taste as nice, besides the residual heat in the bones help the chicken cook from the inside out

    It's a throwback. In the medieval period, they made grand meat pies where one or more winged creatures were baked inside a pastry sarcophagus. As in the rhyme, "4 and 20 blackbirds baked in a pie..."

      They had one of those giant pies on Game of Thrones. I think they killed some of the birds when they cut it open.

      JamesJ Fisk Usually the ingredients were cooked, but sometimes at Royal courts they would put live birds or frogs inside an already baked crust as an amusement.

      Pastry covering was one way they helped compensate for the inconsistency of heating and rendering moist meat in antiquity ovens. Doughs were often heavy and considered discardable from eating the ingredients inside.

      Sometimes they went really overboard and baked a whole cow, pig, or even dolphin, sometimes stuffed nesting egg style with successively smaller animals. I saw a historical reenactor baked a pig stuffed full of partridges or game hens.

      the bone juice adds flavor and nutrition, and you can get even more out of it by making stock

    My mother used to roll canned (I know, but) ham in biscuit dough and bake for 30 to 45 minutes. then we would pull the bread off and feed it to the pets, and the ham would be tender and moist, and without a lot of fat left over. (We were in hard times then and canned ham was cheap, and done right tasted good.)

      @@hopelessheathen8190 we fed the bread dough to the pets, as it was WAY TOO soggy with grease to eat ourselves. IT was the meat we ate, and it would keep for a while after most of the fat was rendered out of the meat.

    I made this for my very first dinner party. It was a show stopper! Thanks chef John! I served it with a simple spinach & greens salad. No one had seen chicken served like this before and the presentation was beautiful! 😊

    Cold dough keeps its shape better and it makes the butter colder again so it's stiffer going in the oven

      It makes the butter cold so that the water won't run off, but instead steam and create the layers of voids that make pastry flaky

      You can eat this...I cook like this all the time for my Mom, she's almost 80 and has had Cancer 5 times...she has no Gallbladder and only 1 Kidney, just cook from scratch rather than prepackaged food with additives. This weeks menu...Monday: Tri-Tip Roast, Baked Potato, Asparagus. Tuesday: Salmon, Steamed Whole Artichoke with butter for dipping and Brie en croute. Wed: Roast Chicken stuffed Spaghetti Squash with Cheese. Tonight: Tri-Tip Sandwiches with Cheese and Roasted Pepper and Onion Rings. Tomorrow: Ravioli and Meatballs, Broccoli and Garlic Bread.

      @@lynnwilhoite6194 You can dissolve the gallstones naturally with Break Stone (common name of herb) tea. You simmer it covered for 20 minutes. Strong brew 3-5x day, @ 1 cup each time. Buy two canisters. I think they are 12 0z. I couldn't find it except in that size container for the best price.
      I avoided a $2000 surgery for my cat. It takes 2-3weeks. Dissolves to powder, passed naturally. Buy it on Amazon. Completely safe.

    I wonder if adding sugar or honey instead of or in addition to the salt would be good. A little sweet'n'savory action.
    "Stuffing is EVIL!" Anyone else have that flash through their brain? I'm sure there's a lot of overlap between John and Alton viewers. I'm guessing since the bird is crusted you can cook it long enough to fully cook the stuffing too. Regardless John's recipes are usually great can't wait to try this one.

      Sounds like a good idea, I would just recommend cooking it the full time then adding the sugar or honey and returning to oven under a broiler for a few short minutes cause sugar on puff pastry at 400 for 1+ hour will burn if applied at the beginning.

    You make these dishes so achievable we dont eat out very often when we do it's usually a very nice steak restaurant due to you we have had French Hungarian Chinese German etc. Cuisine thanks for broadening our palates we were a meat potatoes vegetable kind of couple from southern Missouri

      bilalha123 - The bad thing about boneless chicken farms is that the chickens just lay around all the time. That means you’ve got a yard full of fatty, flabby chickens. 🙄

    Most other cooking channels I only watch the video if the recipe looks good, but I watch everything from chef John even though I know I will never wrap an entire chicken in pie dough
