I think one of their tricks is two different temperature oils. Did you notice they transferred the chicken to a different fryer to finish it? Bet they go with a hotter oil to set in the crisp then switch to a lower temp oil to finish the cook and lock in those juices. Jesus, I'm hungry now.
We vacationed there twice, and we can confirm that it is the best fried chicken we've had so far! Mark captured everything you needed to know about Willie Mae's fried chicken! I would encourage you to give it a try when you have the chance to go there!
I visit family maybe once or twice a year, and the fried chicken IS good, but on my way back to DC, I always stop at Hattie B's in Nashville. It's the best in my personal opinion.

Being a lifelong residence of New Orleans, I am very familiar with willie Mae's, but unfortunately the restaurant is closed for repairs. The restaurant had a 2-alarm fire in the kitchen after closed one evening late last year. As of this time, they haven't started any repairs, but hopefully they will be open soon.

Yams are a sweet potato cooked down in butter, cinnamon, and brown sugar. Theyre heavenly on their own and everyone has little tweaks to how they make it. My grandma sometimes adds a twist of lemon or pineapple juice and vanilla as it cooks.
Willy Mae's is great! Popeyes also started in New Orleans. It got so popular he opened up another one and eventually got franchised and is spreading across the country. It's my favorite fried chicken chain. It would be nice if we could all live in New Orleans.
My favorite dish I get whenever I go down there to visit relatives is a large roast beef poboy that is dressed and you have gravy dripping down your arm when you bite into it.

Louisiana gave us Popeyes and Raising Canes for chicken places but Louisiana's steaks aren't too bad either. They look similar to Texas steaks with southern flavor to it.
Im sure it is awesome. I like my chicken to be fried up a lighter coloring than what my screen is showing here. Maybe there is paprika in the breading that will give it a browner look. But boy is he making me hungry regardless and it does look good. But it looks moist so it surely is not dry. I would still love to try it.
Gravy on rice is really good. I love and have Red Beans and Rice often....but excited to see they have White Beans and Rice; which I've never heard of. Gotta get myself over to Willie Mae's.
I'm from New Orleans and white beans and rice are a staple of the city. They even have white beans and rice in the public school cafeteria. We also had red beans and rice in school and red beans were always served on a Monday. The school white beans always had ham in them and the red beans always came with smoked sausage on the side. You really didn't get a reasonable size of sausage.
When I wasa kid eating Sunday dinner I would also put generous amounts of the au jus from the beef roast on rice at the end of my meal as a special treat. Delicious!

Now, there we have a perfect example of the variety we have in the US. I'm one of those Southerners that isn't as fond of sweet cornbread as I am the savory, unsweetened style. Nothing wrong with either, but the savory cornbread was what I grew up on, what Momma makes, and what was on the family Sunday Dinner table at my Grandmothers' houses. Plus, any leftover savory cornbread can be crumbled into a drinking glass or a bowl the next day and drowned with ice-cold buttermilk. Serve that with a big hunk of sharp Cheddar cheese, maybe a bowl of pinto beans with butter and pickled Chow Chow relish, and a couple of slices of tomato--you'll have the basis of the US version of a Plowman's Lunch. --Dan

Went with everything; a pot of beans, chili, homemade soup, Sunday dinner, etc. My great-grandma made everything from scratch, so hers wasn't sweet and I loved it too. She made it in a cast iron skillet in the oven, and hot water cornbread, and with creamed corn in the batter. As you can see, I'll eat it any way, every day, 😂
I love sweet cornbread but everybody that I know hates sweet cornbread. I use Jiffy all the time when I want cornbread. I have to issue a warning about it though.A friend of mine makes the best cornbread dressing that I've ever eaten. For Christmas and Thanksgiving she makes a lot of dressing and she never has any left overs. Last Christmas she made quite a bit for her family. Late that evening I went to see her and to share stories about our family. She asked me if I wanted any cornbread dressing. I looked at her and asked if she made too much. She said no and told me to go to the fridge and taste it. I tasted it and boy was it sweet. I asked her what happened and she said that she used Jiffy instead of her basic cornbread. I felt sorry for her because the taste of the dressing was good but that sweetness didn't go well with the other ingredients.

If you two ever get a chance to visit the US be sure to ask the locals where to find the best local foods. It is almost always a small local place that makes the best version of the local foods. I have been to all 50 US states and the best food was from small, out of the way, restaurants that you would never find without directions from a local.
I have some Crystal Louisiana Hot Sauce. Grew up with it since my mother was born in New Orleans. We called it our "Cristal" in my household as that's as fancy as we get!
I don't know if you can find it, Look for Food Network's Diners, Drive-Ins and Dives, with Guy Fieri. He goes all of the US checking out many different places, a couple I have been to and some others not far away I need to try. I think he's been to Willie Mae's as well. You would be amazed at the things he finds. BBQ of all types, good Southern soul food like this, steaks, burgers, sausages, Indian, Japanese, Chinese, Vietnamese, all kinds of Mexican and Central and South American food. Canada, Hawaii, you name it.

I don't know what time that guy went, but there is a line around the building and down the Street most of the time in the day. I heard they pour Coca-Cola in their fried chicken batter. Everything in in Willie Mae's is so freaking good. It's not in the best part of town, but worth taking a trip and getting a bite to eat. Jacques Imo’s and Cochon are two other Cajun/Southern hospitality restaurants that y'all should visit when in New Orleans.
I forgot about McHardy's fried chicken on the the corner of N. Broad and Esplanade in New Orleans. Parkway Bakery for Po-boys. I could go on and on and on.
Just remember if you do come here and go to the south you will be well fed and you better bring a appetite! We don’t play around with portions and your expected to eat until your completely full and happy! There is a huge difference between deep fried chicken and pan fried in a couple tablespoons of oil! Get you bottle of oil from the shop, pour it into a deep pot and deep fry anything....batter it and deep fry it. Nothing like deep fried anything! No healthy but oh so good.
all good foods, corn bread with cooked down white beans is so good, but then again all these things are good on their own too... for the gravy and rice you can add red beans as well and have it with whatever you want from hispanic food to fried chicken to meatloaf etc.

Candied yams or sweet potatoes - appears that is cooked with butter and brown sugar! YUMMY! You've probably seen them with maybe marshmallows melted on top - I like them just the butter and brown sugar! Very easy but delicious!! Add brown sugar to your sweetness desire...little or a lot!
When you make the cornbread make sure you butter it and let it melt in before you eat it. I've watched plenty of British and Europeans try cornbread and not like it but they don't butter it. It has to have butter melted into it or it won't taste very good.
WHOA! I live in Louisiana. You gotta crumble that cornbread up in them white beans. Sop em down whole Dippin them in them green bean juices. Use it like the brits use a knife, to shove the food up on your fork. You don't just eat cornbread by itself like that. If you for-real wanna get local, you crumble a cornbread muffin up in them white beans and rice then add about a teaspoon of mayonnaise and stir that up. GEAUX TIGERS

Wow! Finally a place that's the subject of a video where I've eaten and which I've greatly enjoyed. "They've not made themselves fancy." New Orleans is full of places like this that "have not made themselves fancy" and serve really great food. One that I really miss was called Uglesich's which, although run by a couple of Czech (I think) immigrants, served some of the best Cajun/Creole food in New Orleans. But after Katrina wrecked the place, the owners decided to retire. Note the brand of hot sauce: Crystal. That's pretty much what you will find all over New Orleans. It's not as hot as some others and has more flavor: less heat/more flavor.
Loco moco is the only time i like gravy. It’s rice with a hamburger (or spam) a runny fried egg and gravy. Yum you guys should check out a recipe and try that

And we always have scraps or as I call them "scabs" lol the best sides to go with fried chicken (in my humble opinion) are mashed potatoes with brown gravy and buttered corn ❤ blessings and happy eating from Ohio, 🇺🇸
Casseroles are the American way of combining starch with sauce. Use minced beef with rice and gravy with mushrooms and other veggies. Nothing wrong with rice and pasta sauce. Try it with anything. Same with pasta. Most starches will go well with most wet stuff.

Chili on pasta is good. You cook spaghetti pasta as if making spaghetti but instead of a spaghetti sauce, add chili and add shredded cheese. Very delicious
Can only eat fried chicken as a treat. Most people today who would coat their chicken would use an Air Fryer or bake in oven. Years ago,many people made Southern Fried Chicken for dinner regularly. It was delicious but takes a bit of time to prepare. Don’t have time for that, guess I’ll have to head South. You can do rice with Roast Beef and use the pan gravy on top or we have canned AuJus brown gravy or savory etc. another way is make up ground beef, I think it’s minced beef to you. Flavor it with salt, pepper onion and garlic powder and diced onions also. Add the AuJus or a thicker gravy if that’s your preference and top it over rice, add a veg and good for nice Fall/Autumn weather. Easy and fast.
I go to NOLA fairly often but haven’t tried this place. I need to give it a go. Copeland’s is my favorite restaurant. FYI Some New Orleans people have an accent that sounds near Caribbean. A lot of locals pronounce it New Awlins. And many say waoduh for water. And if you hear them say baby you will instantly know they are from New Awlins. Also instead of soda or pop, they say cold drink. But you don’t really hear the d so sounds like cole drink.
Another version of fried chicken you need to try is hot chicken in Nashville. It's hot but you can order it at different heat levels. I know there are videos of it on RUclips you can react to
You guys can get SCRAPS! We can't get them here. A long time ago you could go to a fish and chips restaurant here and ask for extra scraps (crumbs) but nobody does that anymore (for that matter there are hardly any fish and chips shops anymore). I saw that one of the sides was my favorite Beans and Rice. Don't even think about your beans, completely different. Think about making them from dried beans, then adding pork fat and Cajun spices.
Yeah, quite a bit of local restaurants in the US have a more "local" vibe. There's a place down the street from me, and it's considered to be the best place in northcentral Pennsylvania. It's in a very narrowly-spaced, but very large place with a bit of history. It just looks "local", as well.

You can get a roasted chicken from your groceries take it off the bone add baby peas in a chicken gravy put that over Rice.. Delicious would be a good video too.

There is a huge difference between deep fried chicken and pan fried in a couple tablespoons of oil! Get you bottle of oil from the shop, pour it into a deep pot and deep fry anything....batter it and deep fry it. Nothing like deep fried anything! No healthy but oh so good.
all good foods, corn bread with cooked down white beans is so good, but then again all these things are good on their own too... for the gravy and rice you can add red beans as well and have it with whatever you want from hispanic food to fried chicken to meatloaf etc.

Yams are a tuber root vegetable similar (but not) to Sweet Potatoes.

Candied yams or sweet potatoes - appears that is cooked with butter and brown sugar! YUMMY! You've probably seen them with maybe marshmallows melted on top - I like them just the butter and brown sugar! Very easy but delicious!! Add brown sugar to your sweetness desire...little or a lot!
My mom makes candied yams at Thanksgiving and its my daughters favorite thing and yes its very sweet but it considered a side not a dessert

When you make the cornbread make sure you butter it and let it melt in before you eat it. I've watched plenty of British and Europeans try cornbread and not like it but they don't butter it. It has to have butter melted into it or it won't taste very good.
WHOA! I live in Louisiana. You gotta crumble that cornbread up in them white beans. Sop em down whole Dippin them in them green bean juices. Use it like the brits use a knife, to shove the food up on your fork. You don't just eat cornbread by itself like that.
If you for-real wanna get local, you crumble a cornbread muffin up in them white beans and rice then add about a teaspoon of mayonnaise and stir that up.

you guys should try cooking more, those corn muffins are the simplest things to make, just follow the box instructions, mix the batter pour into a muffin mold and bake. p.s. muffins with bean juice is to die for

"They've not made themselves fancy." New Orleans is full of places like this that "have not made themselves fancy" and serve really great food. One that I really miss was called Uglesich's which, although run by a couple of Czech (I think) immigrants, served some of the best Cajun/Creole food in New Orleans. But after Katrina wrecked the place, the owners decided to retire.
Note the brand of hot sauce: Crystal. That's pretty much what you will find all over New Orleans. It's not as hot as some others and has more flavor: less heat/more flavor.

And we always have scraps or as I call them "scabs" lol the best sides to go with fried chicken (in my humble opinion) are mashed potatoes with brown gravy and buttered corn ❤ blessings and happy eating from Ohio, 🇺🇸
Casseroles are the American way of combining starch with sauce. Use minced beef with rice and gravy with mushrooms and other veggies. Nothing wrong with rice and pasta sauce. Try it with anything. Same with pasta. Most starches will go well with most wet stuff.
Find some string beans. Snap them, and cook them in a pan with bacon, until they are almost falling apart.

Chili on pasta is good. You cook spaghetti pasta as if making spaghetti but instead of a spaghetti sauce, add chili and add shredded cheese. Very delicious
Can only eat fried chicken as a treat. Most people today who would coat their chicken would use an Air Fryer or bake in oven. Years ago,many people made Southern Fried Chicken for dinner regularly. It was delicious but takes a bit of time to prepare. Don’t have time for that, guess I’ll have to head South. You can do rice with Roast Beef and use the pan gravy on top or we have canned AuJus brown gravy or savory etc. another way is make up ground beef, I think it’s minced beef to you. Flavor it with salt, pepper onion and garlic powder and diced onions also. Add the AuJus or a thicker gravy if that’s your preference and top it over rice, add a veg and good for nice Fall/Autumn weather. Easy and fast.

I go to NOLA fairly often but haven’t tried this place. I need to give it a go. Copeland’s is my favorite restaurant.
FYI Some New Orleans people have an accent that sounds near Caribbean. A lot of locals pronounce it New Awlins. And many say waoduh for water. And if you hear them say baby you will instantly know they are from New Awlins.
Also instead of soda or pop, they say cold drink. But you don’t really hear the d so sounds like cole drink.
Another version of fried chicken you need to try is hot chicken in Nashville. It's hot but you can order it at different heat levels. I know there are videos of it on RUclips you can react to

You guys can get SCRAPS! We can't get them here. A long time ago you could go to a fish and chips restaurant here and ask for extra scraps (crumbs) but nobody does that anymore (for that matter there are hardly any fish and chips shops anymore).
I saw that one of the sides was my favorite Beans and Rice. Don't even think about your beans, completely different. Think about making them from dried beans, then adding pork fat and Cajun spices.

There's a place down the street from me, and it's considered to be the best place in northcentral Pennsylvania. It's in a very narrowly-spaced, but very large place with a bit of history. It just looks "local", as well.

You can get a roasted chicken from your groceries take it off the bone add baby peas in a chicken gravy put that over Rice.. Delicious would be a good video too.
