How to make Croissant Bread or Crescent Rolls

- Today we prepare what in Italy is called pane schiocco or pane scrocchio, which is actually a croissant bread similar to a savory or not sweet croissant. Call it what you want, the important thing is not the name but the flavor which is a spectacular 🤪.
For this recipe you will need a rolling pin which as usual I didn't have 😂, while the ingredients are:

Sugar 30 g
Dry Yeast 5 g
To laminate the dough:
Butter 90 g
Flour 40 g

If I want to make a recipe using 100g of flour, how do I determine the quantities of other ingredients needed? Is there a specific formula for this calculation? I think the french would take issue with calling this a croissant as the preparation method for a croissant typically involves several steps of folding and refrigeration to create even more flaky pockets of butter, but this recipe looks like a great way for a home cook to make crescent-shaped dinner rolls with more textural interest than a simple brioche. I would happily serve these at breakfast or a thanksgiving/xmas feast.
