This pudding was very good. I don't believe you could get depth of flavor from an off the shelf pudding mix. I followed the recipe exactly, and then used the pudding on top of a lightly sweetened cheesecake, and it was a BIG hit. I would def make this again.
I know one can buy a faux boxed mix but I have never seen anyone make a video for pistachio pudding. Such a nice change for weekend brunches or afternoons by the pool. (looking for a friend with a pool) This would also be great piped into a pate choux! Thank you #HomeCookingAdventure.

Good recipe, thank you! That looks delicious. The egg, sugar, and cornstarch do not have to be creamed. You are not making a cake. Instead, sugar should have been added to milk and cooked till dissolved, then add cornstarch to the milk, already liquified in milk. Let this thicken a bit, then temper eggs with this mixture and then add egg to mixture and whisk to thicken. At this point, add in pistachio flour, almond essence ( you do not need vanilla unless it moderates the almond a bit). One option is to eliminate the cornstarch entirely and add gelatin instead. Agar can be added while cooking the milk at the beginning. Gelatin is more delicate and should be bloomed in cold milk, then added last to hot mixture and stirred well to dissolve. The two thickeners - egg and gelatin will do a nice job of thickening the pudding and keeping it Keto with a low glycemic index. Cool in fridge in tiny containers - I use the dessert containers from Costco which have lids. Add whip cream on top.

You can also eat it warm if you like it but if you want it chilled maybe 1-2 hours should be just fine.
