Good info from the video but very disappointed in some aspects of the website. When looking at sous vide cookers, for example, several of the recommended cookers are no longer available. I would think, if you hold yourself out as an expert on the subject, you would also make sure those items you are supporting are available and, if not, find replacements.
I don’t understand how you can know the meat is the right temperature when it’s in a vacuum sealed bag? You can’t use an instant read thermometer without ruining the bag.
Here's two ways. Use a wireless meat thermometer sealed in the bag. Or, use AFME's cooking by thickness ruler. For example, a 30mm slab (steak) of beef,lamb,or pork takes 1:40 to heat through to the middle, right out of the fridge. If you want to pasteurize it at 131*, you need to cook it for 3 hours. 1 hour 35 minutes at 140*. This info is on their website.
