You do know a shinny or polished edge has absolutely nothing to do with sharpness. A knife can be shinny and be completely dull.
My guess is they do. Being a knife company. I think they were addressing multiple aspects, and felt it was relevant.
Can I use oil instead of water?
My ubderstanding you can use either BUT once you use one, don't use the other. Not sure if that's true or not (maybe once you use oil, don't use water? It would be nice to verify that, one way or the other.

I'm still exceedingly disappointed that I did not receive my cutting sheets along with my chef's knife and non-stick pan that I ordered in my shipment. But anyway, thanks for the refund. Cutting sheet recommendations, anyone?
What do you mean by cutting sheets?
@@shamaelsyed6460 they sell, or rather sold, a cutting surface called "cutting sheets" which is like a cutting board but as thin as a sheet. Hence, "cutting sheets."
