- Stuff In Our Cupboard Taco Soup Recipe. Welcome Friends! We hope you are safe and well, in this time of global pandemic. You may find yourself staring into the cupboard and wondering what you're going to cook with what you have on hand. This riff on a taco soup recipe may be the answer! Thanks to @Ricardo Cuisine for the inspiration!
Ingredients:
Squirt of oil
500g (1 pound) ground beef
2 onions sliced
1 chipotle in adobo, diced
15-30 mL (1-2 Tbsp) taco spice, or Tex Mex spice mix
2 - 284 mL cans Rotel (or crushed tomatoes)
1.5L (6 cups) stock - chicken, beef, veg
30-45 mL (2-3 Tbsp) pickled jalapeño, chopped
125g dry macaroni / dry pasta
250 mL (1 cup) frozen corn

Method:
In a heavy stock pot brown the beef in a little oil.
When the beef has browned, toss in the onion and chipotle.
Stir and fry until onion has softened.
Stir in the spice mix, tomatoes, and stock; bring to a boil and cook 5-10 minutes.
Stir in the pickled pepper, macaroni, and frozen corn; continue to boil until pasta is cooked.
Test seasoning, and adjust with salt and pepper if needed.
Serve with sour cream, avocado, cheese, and / or nacho chips.

I never understand how on earth you don’t have more people watching your videos or subscribing. I watch other people on VERY well known channels out there making cloudy stock, making unobtainable difficult recipes. Everything you do I feel like I can make, and the ingredients are easy to come by. Thank you for continuing to post content during these times! They don’t go unappreciated!
Side note: my boyfriend and I are always telling people about your recipes and different things you are doing! We’ve tried some and they ALWAYS turn out amazing! Out here (trying) to spread the word about your channel! Still think Bon Appetite needs to collab with you!
I love this channel, but even Glen does a good bit of stuff that's more educational than it is functional for home cooks. I don't think most of us are hanging prosciutto in our basements, for example. And without knowing him personally, I get the idea that Glen very much appreciates that fact and tries to separate out the "let's explore" and the "let's cook" bits of the channel.
I must say this is the first time I've been to your channel or seen any of your videos, but your oven stock is about the prettiest I've ever seen!
I hope the next chance I have to make any stock, I can remember to try it oven-style. That was beautiful!

@@peterpain6625 Chicken has appeared in a couple of videos. Once he jumped on the counter while Glen was in the middle of cooking. During the recent beer brewing video he jumped on Julie's back.
Loving the "Pandemic Series" just because it teaches flexibility and creativity and using stuff from storage. This is the kind of content I'm sharing with my college-age kids, to help them learn how to think like a cook rather than just follow a recipe!
Great video to lighten the mood in the current situation. Practical advice also that we should all be taking on board. Make do with what we got and most importantly don't panic and bulk buy

I shouted the same thing! Kitty thinks kitty wants some taco soup. Mine always want what I have, so I let them poke around after I'm done and they almost always just look at me with derision, like, "We waited around and THIS garbage is what you were eating?"

A good and hearty soup made from pantry and freezer stuff. Nice. Please, more of this. But not just soups please ;) Thanks for sharing.
My family has been making this for years. Mom got the recipe off a packet of taco seasoning when I was a child back in the 1970s. After the meat is browned and the onions sweated, add the bag of taco seasoning. We use the hot seasoning bag. Then add one can of tomatos, 1 can of corn and 5-cans of different kinds of bean (pinto, black, chick peas, navy, red). Sorry, no noodles. Finally, turn off the stove and put 1/2 pack of ranch powdered mix right at the end. Stir it in and you're done. Over the years, we've added different kinds of peppers, olives, spinech, jalapenos and just about every kind of topping imaginable. Anyway, love the program and I don't miss an episode.
Ranch mix? That seems to be an unusual addition. My tastebuds are trying to imagine it. Interesting... 🤔
Vegetarian version uses can of whole pinto beans and/or black beans instead of meat, and vegetable broth instead of meat broth. We love taco soup. It’s a regular at church potlucks and school functions. Now that there are meatless “crumbles” in the freezer sections of most grocery stores, one can even have a burger in the soup. We top with crushed chips, shredded cheese, sour cream, and pico de gallo (fresh salsa). A full meal in itself or serve with a side of cabbage slaw made with cilantro, minced onions, olives, and an oil/lemon dressing.
Loving “the pandemic series”... simple, easy, fast, cheap recipes... good for anytime the money is tight or you need something fast!

So... basically beanless chili w/ macaroni noodles. Made this tonight, it was absolutely wonderful.
I took your idea, used what I had and made a soup for supper. The wife and I both enjoyed it. I try to keep a good pantry of dried, caned and frozen food.

Robert Forslund I heard stores are gonna have an hour to let the elderly and disabled shop. People are ridiculous. Please think of other people when you are adding that sixth pack of toilet paper to your cart.
Many people I know(personally and thru couponing) are offering to pack bags up for seniors(or other not so healthy) or shop for them so they dont have to go in public
Yes stores are doing hour for ederly and disabled but they wasn't lying when saying these aholes are buying up bunch shit..like toilet paper and figjting over it. What does shit paper got to do with the virus..one person doesn't need 100 rolls.idc if your in the house for 2 weeks..ppl ND to be more considerate to others..not all of us got money go buy out the store..I'm on budget..
@@kathedison3887 In one case at least, it was a scalping scam. There are legitimate reasons for getting more than usual of something -- buying in bulk for donating, for instance, or having a bit extra so you don't have to go out an extra week -- but people are being busted for supply scalping here in some parts of the US.
This type of food and cooking almost always turns out delicious and hard to replicate, so it's fun. I have dried kale leaves in the oven, blended them to a powder and added to soups, stews and popcorn. Really delicious, esp. with a sprinkle of Pecorino cheese on top. It's now a staple in my pantry.
I almost made something similar on Saturday. I had hamburger to use up and had pulled out the can of RoTel and everything but then I found mushrooms that needed to be eaten and pivoted to something more akin to Stroganoff. Your point about learning methods is spot on, it is very gratifying to cook "by feel" rather than strictly measuring and following a recipe. And I hope you are saving that bottle of salsa Lizano for when things are really dire and your pantry is worn down to nothing but rice and dried black beans so you can make Gallo Pinto.

Yup - cooking with what we've got until those shelves are restocked. I'm hoping the "panic buyers" have enough to get themselves out of the panic mode.
Great looking recipe and that is just the way I tend to cook.
I wanted a simple moussaka one skillet dinner and used all the right ingredients (many that you just used) and added diced eggplant (didn't even peel it), diced potatoes (instead of what normally goes on top) and the spices like nutmeg, cinnamon, etc. and ended up with a dish that tasted very much like moussaka. We liked it so much I've made it MANY times.

Yum. Would enjoy trying this version. My family has been eating this for decades. We first came across it printed in the local newspaper back in the early 1990s or late 1980s. My mother may still have the newspaper clipping somewhere. Here's the version we make today which has been slightly updated:
Taco Soup
1-1 1/2 lb Hamburger
1 Sweet Onion
1 Bell Pepper
2 16oz cans Stewed Tomatoes
2 16oz cans Yellow Hominy (Drain one.)
1 16oz can Kidney Beans
1 16oz can Pinto Beans
1 16oz can Original Ro-Tel (Optional. Adds Heat!)
1 Ranch Dressing Mix
1 Taco Seasoning Mix
6 Tbsp Chili Powder
1-2 Bags Tortilla Chips
Brown hamburger. Drain. Add diced onion and bell pepper. Cook with hamburger until glazed. Move mixture to a 6-quart pot and add remaining ingredients except tortilla chips. Mix well. Bring mixture to a boil stirring every 5-10 minutes to prevent sticking. Reduce heat and continue cooking and stirring for 20-30 minutes.
Feeds 6-8. Good topped with shredded cheese.
Thank you Glen. Your old style recipes will be helpful as people try to stretch their food supplies. Our great grandparents new a thing or two.
We need more of these! I'm in Calgary and the grocery stores are looking picked over, but I was still able to make a similar dish. We call it lazy lasagna using a lot of pantry items. I love this idea and encourage you to do more of them. Stay safe!

Today, I cooked up 3 bags of the 15 bean soup dry mix and put it in pint jars in the freezer. I did that because I had the dry beans and our local grocery said they were only going to be open 3 days a week. Now I'll just use those 15 bean mixed jars in place of canned beans and in the end, it was more economical and used up some stuff sitting in the pantry for years.
Tomorrow, I'm going to make the bacon and bean soup from this channel using it and I'll probably freeze the leftovers in pint jars, which that overnight and can be lunches.
A lot of Glen's recipes are great for cooking ahead and freezing even if that's not the point behind them. So simple, quick to cook food that freezes well- sounds like something we all could use right now.

I made a similar soup a month or so except with chicken thighs! Instead of noodles I used rice & black beans with corn, onion, chipotles, rotel, & I also have a ton of stewed tomatoes! Topped with pickled jalapenos, cabbage, queso fresco, creme fraiche & crispy corn tortilla & it was delicious!
Got the iron fish after see you use it recently. Thank you. Such an easy way to add a bit if iron.

Thankfully I can still get groceries (minus some tinned foods, dried pasta and a couple other things) in the smaller shops nearby. Being relatively rural in Ireland helps I'm sure!

Love taco soup, this recipe is close to how I make it, including the chipotles and the corn but minus the jalapenos and the macaroni. My preferred version also takes a bit of a nod toward the chili zone and adds chili/kidney beans, and for a stock I use tomato juice. 100% recommend getting some cheese and sour cream to top each bowl along with Frito style corn chips.

My mother and I like a simple Fajita Soup as well. Not exactly "Stuff in our Cupboard" for most people, but usual staples in our household.
We usually start with sweating diced onions in oil, then adding chicken breasts into the pot. We fill with water to cover the chicken and bring to a boil until the chicken is done. We take it out, shred it, reintroduce it to the soup. After that, a can of black beans, red beans, kidney beans, and corn. Toss in a jar of salsa, and a package of taco and let cook until all the flavors are melded. Can toss in some cooking cream after it cools a bit, then serve. (Can also un-quarantine fancy it up with shredded cheese and tortilla chips).

I did your soup and it's a bright idea. I passed on the maccaroni thing but I add as thickening agent some MASECA corn flour that I previously mixed with cold water. That in my mexican mind was a sort of Chileatole or Clemole. Anyway thanks and keep safe.
Here in Germany many things are sold out (cheap long shelf life food, tp and those things mainly), but most supermarkets are trying really hard to fill up the shelfs. You can get everything, but you surely have to visit more than one shop. Let's hope that it calms down during the next weeks...

I confess, I bought toilletpaper last friday, but I needed it because I started on the last roll.
It's okay to buy one pack of TP. Hell, Missy and I will grab 2 if they're on sale. But this hoarding stuff buying 17 packs is bullshit. Seriously... how many times a day is a person dropping a deuce at work to justify that much TP at home?

Looks delicious. For vegan/vegetarian you could easily substitute pinto beans and vegetable stock.
I make something similar quite often, but my version is not as brothy and I serve it over rice usually. I have a 2 year old and it's easier for him to eat this way. We love it and eat it all the time. It's a good way to get rid of veggies in the fridge that are starting to look a little not great too.

Thanks for the kind thoughts, Glen and Jules. I took a look in our pantry cupboard and in the freezer...and decided to wait things out and 'rotate the stock' at home. After watching several seasons of the Survival series ALONE, I realize that smaller servings are just fine. Pantry supplies now last longer.

Hello Glen, here in Germany just about everybody goes crazy to. I wanted to do my normal grocery shopping on Saturday like I always do. Everybody told me not to, because people went nuts. Lucky me I always have food at home, because I buy more then 1 pack of noodles when they are on sale and I do this with everything else, so I'm good to go.
I had frozen prawns and frozen hamburger meat. On Saturday I made me a Thai noodle soup with prawns and on Sunday I had pasta-sciutta with a tomato-hamburger sauce.
I try to go grocery shopping on Tuesday after work. Maybe I can get some cheese, bell peppers, banana and eggs this time. I need some fresh veggies and fruit.
Everybody stay healthy and calm no matter where you are in the world. Stick to the hygiene and stay away from crowds. Think of your family, friends and the stranger with a poor health condition. Anyone should have the right to a healthy body, no matter what age.

You can try flour tortillas as dumplings. Fits a bit and still gets the carbs acriss.

Oh ya I have made this before, poor guy like me just uses a cheap taco flavoring pack but everything else looks the same. This makes for great lunches for work as well.
