    French Fries:
    Cut and soak for 20 minutes in water, rinse well. Boil in water for 2 minutes, strain immediately and rinse with cold water to stop the cooking process. Lay out to dry completely before frying in very hot oil for 5 minutes. Work in small batches to not overcrowd. Allow to cool completely before storing in the freezer. To prepare frozen fries, Add to hot oil for 10 minutes or until heated through and crispy or bake on a cookie sheet, coating the fries with oil and salt at 425 degrees for 15 minutes.
    Hashbrowns:
    10 medium potatoes shredded
    6 tbsp butter
    cook on stove top for 15 minutes
    add
    4 tbsp of arrowroot powder
    1 cup flour
    4 tsp redmond real salt
    1 teaspoon garlic powder
    mix together and shape into rectangles, fry 5 minutes per side or until golden brown.
    warm up on the stove top or in the oven at 350 for about 10 minutes
    Smiley Fries:
    6 cups mashed potatoes
    3 tbsp arrowroot powder
    1 cup flour
    2 tbsp redmond real salt
    Combine and roll out dough to 1/4 inch thick, cut circles, make smiley faces and fry in oil for 4-5 minutes per side until golden brown.
    Heat up in the oven at 350 for 10 minutes.
    Crispy Mashed Potato Balls:
    2 cups plain mashed potatoes
    2 tbsp arrowroot powder
    1/2 cup parmesan cheese
    1/2 tsp garlic powder
    1/2 tsp onion powder
    1 tsp salt
    mix well and roll into small balls, coat them with flour or arrowroot powder. Fry in VERY hot oil for about 8-10 minutes or until all sides are golden brown and crispy.
    Reheat in the oven at 350 for 10 minutes.
    Potato Waffles:
    3 cups prepared mashed potatoes
    2 tbs ghee or butter melted
    1/2 tsp garlic powder
    1/2 tsp onion powder
    3 eggs
    1/2 cup flour
    1 1/2 cups shredded cheddar cheese
    1 teaspoon salt
    Combine ingredients and add to waffle iron, spreading out thick batter.
    To reheat put in 350 oven for 10-15 minutes or until heated through.
    Gluten Free Gnocchi:
    2 lbs mashed potatoes
    2 cups gluten free 1:1 flour
    1/2 cup parmesan cheese
    1/2 ricotta or cottage cheese
    1 egg
    1 tsp salt.

    You continue to impress me with all you do Kelsey! I was inspired to grow potatoes for the first time in a few decades, and I have not regretted it! Potatoes are rather inexpensive here in Maine, yet no sprays for me. So my home grown product suits me well. Now the inspiration has been provided through your videos again!! My harvest will be far from just cold stored! Imagine the eyes of the young I care for when offered homemade smiley fries!!! Endless thanks, prayers, and blessings to you.

    You should parboil whole peeled potatoes for hashbrowns. When they are cooled shred, spread on cookie sheet and freeze. Break apart and bag up.

    I would love to make the hash browns but am a bit confused about cooking them in butter on the stove. You didn't show that part and skipped it. Did you fry them in butter on the stove? Did you par boil them in water with butter in it?

    I love potatoes and find they are the kindest veggie for my occasional IBS. My method of making home fries and hash browns is a lot less labour intensive than yours, but still produces beautifully crisp potatoes. I par cook the potatoes about 2/3 done in the microwave the night before, chill them in the fridge overnight and next morning slice or shred them them and cook as desired. The par cooking eliminates most of the excess moisture and allows the potatoes to fry to a beautiful, crisp golden brown. ☺

    Hello Renee, how are you and Mr doing today? Looks like you got your shopping done for now. Good on you!
    I have been trying to figure out how to get the videos in chronological order. I will watch one of your videos and have a question for you, but I am unable to get back to that video. Do you know if it’s possible to put these in any kind of order? I sure appreciate your help.
    I had a question, actually, several, about your market stand. I watched your video last night, showing the goods you have in your market Stand. The area that I live in is not possible to put anything like that up because I’m in the country, sort of anyway! I live in Western Washington, about 70 miles south west of Seattle and I have checked on starting a home baking business to sell goods online, but the licensing for my state and county is absurd and completely ridiculous. Anytime you sell things from your home, you have to be licensed and inspected and they make it so complicated that is hardly worth doing. Especially when you make cookies and add eggs or dairy to it as an ingredient, that’s a big no-no! I am curious as to what your restrictions are especially for selling your jams and jellies. I don’t know if it is even possible to sell your home canned products. Can you please set me up with some of the information on how you were able to get your stand started? Or maybe you have a source to go to that could help me out.
    I really enjoy watching your videos, and I always get a chuckle when you’re Mr. comes in and says “Hello Friends!” Like you say, he’s a hoot! 😂!
    I enjoy your videos because you’re so down to earth and don’t over complicate things. Some videos are just too complicated.
    My husband passed away over 10 years ago, and I am usually here on my own and I don’t eat a whole lot. However, I love Canning and preserving and preparing food. I’m sure I got at least 700 jars of canned food that I’ve made throughout this year. I enjoy Canning all year long as opposed to just when the garden says it’s time to harvest. I didn’t have a garden again this year of having my ankle rebuilt and was not able to fit a garden in my schedule. My brother has been living with me now for four years, and between the two of us, we only will eat usually one meal a day. He just had major Surgery on his Back and now I am caring for him. We don’t eat much although I do enjoy a sausage and egg muffin or homemade breakfast burrito now and then.
    So, does your Mr have a job or is he retired? What did he do? Maybe he should be a stand-up comedian! The two of you are great together!
    Anyway, I wish you continued success on RUclips and your Marketing Stand. God Bless you Both.

    I have been making twice baked potatoes for the freezer and we have loved having a frozen convenience. It is easy to do a few and freeze. We do French fries once a week and we had a small cutter but upgraded to the big guy and it is tough for me to use. I have wondered about freezing and just might have to try because potatoes have gotten really expensive and they are on sale now. I never boil my fries first. Do you only do that when freezing?

    I like people ask me why do you poke your potatoes well my sister didn’t poke her potatoes and put 25 of them in the oven and 20 minutes in Dix bloated and knock the door completely off the oven and there was potatoes everywhere in the kitchen on the floor on the ceiling all over the kitchen cabinets everywhere and when we came in the door she was sitting on the floor wanting to know why it did that and I’m like did you poke your potatoes with a fork I didn’t know I had to weld Dale she know never put potatoes in the oven without forwarding them if their whole because they will explode

    My parents my dad built a potato crate to feed up off the ground and just basically just a wooden crate with slacks in it for airflow and then he built a cold storage room in our basement and stuck it in it and then the back wall was all the canned items and then he had it insulated so it would stay cold and he control the temperature by opening or closing the window and we only had like six potatoes brought out of 290 pounds so I think that’s pretty good

    Somehow I missed the memo that you can make waffles with potatoes 😮 they looked amazing! I think things like this get by me because I’ve never enjoyed cooking so I never really sought out recipes or new ideas. You’re videos have pushed me to try new things and my husband has enjoyed the results too lol. In fact, as your video was ending and the beautiful scripture was on the screen, he called me. I paused the video so I could talk to him. As he always does, he asked how my day was going and I told him I was watching your video and how you were working on potatoes and specifically about the waffles. His response was, “are we having those for dinner?” 😁 I love the hashbrown patties as well and they’re so convenient. I’ve purchased those at the store but frankly there is something in those that makes me feel sick after eating them so now I’ll just make them myself.

    So those potato balls, a taco place here in Utah has something like that but adds little pieces of jalapeño in them. They are delicious yet expensive. I bet that would work perfectly and I could tons vs a few. Im sure plain & a bit of spice would be amazing!

      Hello and welcome! I'm so glad you are here! For you questions regarding the meat, it is so so tender! Like fall apart tender. I personally think all canned meat is tender however, its texture does change a bit during the canning process, its hard to explain until you try it. We love it!

    I love that you call runny eggs "dippy eggs". My little sister called them oke eggs when she was little - she didn't know it was yolk" so I often call them that.

    Thank you for this video I am new to this and I had no idea how to even start preserving potatoes and this is a game changer for me….however my potatoes didn’t do well can I use store bought potatoes and do these same recipes?? I’m still learning how to grow potatoes and haven’t found a system that works for me going to try raised bed method for them next year

      Hey There! ABSOLUTELY!!! Use whatever you have access to and whatever is within budget! If I couldn't grow my own I'd try and source organic, but if I couldn't afford it I wouldn't hesitate to buy conventionally grown potatoes.

      I like using those for roasting or french fries! We especially love smashed roasted purple potatoes or cutting them in half and placing on top of parmesan cheese and roasting!

    Just want you to let you know, you don’t have to boil your French fries, par bake them in oil for 5 minutes on 130°C, let them cool off completely and then freeze them. If you are going to eat them bake them in oil on 180°C till golden brown and when you remove them out the oil, do them in a bowl with paper towel and toss them up a few seconds and you will have fries like we eat them here in Belgium and we are known for our Fries here 😎☺️😉! Just want to help you to save some time 😘🫶🏻

      Oh yes, there is much grieving but so much relief and healing once you commit to giving it up. I’m not truly allergic, I’ve developed a severe sensitivity due to some underlying health issues so I’m hoping that in healing those issues I’ll also heal my intolerance to gluten.       I knew I was drawn to your channel for a reason! Well, several reasons. I was tested gluten intolerant 16 years ago. Most foods are no big deal, but there are a few that are tough to pass by, even after all these years. I stick with it because it was the answer to my unanswered health concerns.

    Hi Kelsey. Greetings from Perth Western Australia. My first time watching. What your husband is probably referring to is probably what we call Potato Croquettes. The idea is mashed potatoes, double coated in flour, egg and breadcrumbs and deep fried. They also freeze well . Regards and cheers

    I made fried mashed potato balls one year. I scooped them into balls with a small cookie scoop, froze them, dipped them in eggs, coated them with bread crumbs, froze them again then fried them. They were fantastic.

    What kind of oil do you use for frying?

      I keep Organic cold pressed olive oil, avocado oil, coconut oil and tallow on hand. I used a mix of olive oil and tallow here.

    Everything looks so good! I have done parboiled and parbaked fries since we cant do fried, they were good too! Anything homemade with love and our own hands is so much better than store bought! I love hearing the littles in the background! Thanks and Blessings!

    Your psychic abilities never cease to amaze me. Lol! Although they aren’t organic, I found a great deal at an Amish market for a 50 pounds of potatoes for $18 and I couldn’t pass it up. I am at the tail end of preserving them and running out of inspiration and new ideas. This was great timing, thank you again.

    I've made the mashed potato balls before and some times (when I remember to get the cheese sticks) I cut a cheese sticks into small chunks, about 8 per stick, and form the potatoes around them for a extra cheesy ball.

    I don't have room in my freezers, but I did cut up a bunch like French fries and canned them up. Those hash brown potatoes looked amazing. I have never thought to make those myself. I may have to give that a try...and then you made waffle fries...my mouth is watering lol.

    I think the potatoes your husband is talking about is the small gold potatoes. I think you boil them up with the skins on, then put them on a cookie sheet smash them down pour butter over them , parsley and bake them till crisp. They will be soft inside and crispy outside.

      Thank you! I keep Organic cold pressed olive oil, avocado oil, coconut oil and tallow on hand. I used a mix of olive oil and tallow here.

      Yeah I know they are weird!!!
      My kids could live on pizza and tacos!!!
      That’s how they roll !!! (3 of them )( 1 kid would just live on chicken strips and Spaghetti)

    Wonder if those potato balls are hushpuppies. I've never had them but that's what I think they might be. Like all these ideas for potatoes!

      Not quite, hush puppies are a bit more doughy and cake like! These are mostly potatoes, but now I want hush puppies 😂
