    I was always put off sausage rolls thinking id have to go out and buy the meat which would be full of fat, I never thought about using my favourite sausages from a local butcher until you inspired me. I made them today, the best sausage rolls I've ever had. Thank you.

    I remember growing up watching Nana during December make these all day as she would make about 500 bite sized rolls for Christmas gifts. Some of y’all will cringe, but my friends and I loved eating them after reheated in the microwave and with Hinze ketchup. Great video 🇺🇸

      my aunty whould make fruit cakes for people and give them as christmas gifts, the problem was they had a LETHAL amount of rum in them lol.

    Sausage Roll Heaven. I was happy to escape England as a 20 year old in 1981, so now, as a 60 year old in Sacramento, Ca I miss nothing because here are the great recipes ( your version anyway) I cook all these English foods here because I love them and I dont have to worry about metric numbers.We visit England often but not for the last 18 months, thanks Covid. Coming home soon though. Nice to see your recipes. My cousin was a sous- chief at a large Manchester hotel for a lifetime. Good job John.

    Thank you, John. I made this today in preparation for Christmas here in the US. We do miss sausage rolls as not easily available in the supermarket. Your direction is so precise and easy to follow that make me eager to try. It came out great! Note: we just put about 35g of meat to allow seam on the pastry.

    Brilliant. I honestly have never thought about taking apart pre-prepared sausages and making them better! Wonderful idea. I could imagine and caramelize chopped onions and finally chopped bell pepper and 1 million other ideas

    Just made these, outstandingly good. I'm a 🇬🇧 expat now living in the 🇺🇸 and it's been years since I had a sausage roll and these were as good as any I bought previously in the 🇬🇧. Just in case there are any other people from the US watching this and browsing the comments I used Smithfield Market brand ground pork (85% lean) from the chiller, and Greenwise brand puff pastry sheets from the frozen section.

    John you are quite wonderful, it's so easy to follow your so tasty recipes. Today I just ordered your two books and sourdough starter from your web site. Now I won't feel guilty when I use your recipes. I've also just bought some bratwursts from a local butcher in Campbell River, Canada, the best I've ever tasted and now I can make the very best sausage rolls. Many years ago gentlemen were held in high esteem, my mental image of you is such, it's nice to know there are still some around.     Thank you, I had sausage rolls once when I was a child. We received a big frozen bag of them as a Christmas gift, made by a dear friend. This is the recipe closest to what I remember of them. I am going to make these this weekend.

    I put a little water and grated onions in to the sausage meat mixture it gives an amazing taste. Water makes the meat fluffy and softer. Love your dexterity with measuring. ❤️

    Great video as usual. My take on the rolls is to add 25% sage n onion stuffing. Mix that up with the pepper.and suasage meat .delicious. Got to try the curry flavour. Keep up the great videos John.

    I opted to use some store-bought sausages as-is and then sprinkle my seasonings onto the inside of the pastry instead. Saved me a lot of time, but it also made it a bit harder to get the ends of the rolls to stick together.
    to anyone reading this who might want to use this method, I recommend placing the sausages on one edge of each square *before* sprinkling, and then moving each of them to the opposite edge afterward. that way each square has one strip free of seasoning for you to brush the water onto.

You show how to make each item and keep it simple and easy sticking to normal ingredients I would like most people have at home thank you very much I'm in my 60s and it makes it easy for me to cook and freeze them so I only need to reheat them thoroughly for health and safety reasons thanks John.

      Thanks John I was going to try making the steak pasties because they sound great and I'm sure easy to make. A bit of advice also please. I use the pastry from the shop for my sausage rolls but I'm wondering can I make suitable pastry at home to use instead and do you have a video on home made pastry for the sausage rolls. Also I did make the pies the other day going with your video and they were to die for you really and truly showed your skills and shared with us all you really inspire me thanks a million.     I made these today and they were delicious! I cut them into little canapé sized ones so will freeze whatever I didn’t cook. They are so much nicer than shop bought 😊

    Great recipe, John. I have a sausage roll recipe which is very popular with family and friends. Like yourself, I buy my puff pastry pre-bought and find that Asda's Extra Special sausages are great for making homemade sausage rolls. For the sausage meat, I add grated carrots and onion, fresh sage and thyme, black pepper, celery salt and breadcrumbs. Personally, I like my sausage rolls to have a savoury taste.

    I have also used pre-made fresh/frozen puff pastry for sausage rolls and they always turn out smashing! I've also made my own rough puff/flaky pastry for the same, I found the best way of making this was to freeze the fats before grating them into the flour mixture, this and adding chilled water, mixing through with a fork so as not to melt the fats with my hands. This means you can see the grated fats in the pastry and this is what helps to lift the pastry as it cooks by creating pockets of air....makes a superb flaky puff style pastry and not at all heavy. Never had any complaints...yet lol!

I will definitely give the "proper" puff pastry a go when I'm able ...I only tend to go for the easier quicker version as I'm unable stand for long in the kitchen due to osteoarthritis in my knees.       Yum! I just add finely chopped onions to mince meat, along with the usual spices and maybe a dash of Worcestershire, and some garam masala. I find the onions caramelise themselves while the rolls are cooking. They do add a lovely sweetness don't they? Mmm, must make some this weekend!

      I can't believe you said bought is better than home-made John!! I do hope you are going to do a video also on home-made puff pastry with your home-made butter? I know bought puff pastry is so convenient, but those who have never made their own puff and flaky pastry, are missing out on one of life's great experiences. Like kneading your own bread. And of course, Danish pastry offers the best of both worlds with butter-layered yeast dough! Apple & Blueberry Danish recipe coming up maybe??

    I’ve got my sausage meat from Morrison’s. I don’t know what it is about that sausage meat but it makes an amazing sausage roll so I came here because I’ve got things from this channel before and I know you would’ve made sure I wouldn’t of put no foreign ingredients in😂

    Hi John. This could have been me making this video. I make mine exactly the same every saturday morning although i hadn't thought of putting curry powder in. Will give it a try. They go like hot cakes when i take then to my hubby's man cave, him and his mates love them, and as you say the smell in the kitchen is lovely So much better than shop bought and easy peazy to do.       At the Scottish Festivals, usually you can get them. The best ones are from Cameron's of Cape Coral, Florida. Good reason to travel south once the travel ban is lifted. Good time to come is late January for the Caloosahatchee Celtic Festival. Hopefully we'll all be back to normal again.

    I'll be trying these, John. Love the versatility of puff pastry. I've made cinnamon rolls, Danish pastries, cheddar puffs and apple strudel to name a few. Everything seems to come out the oven looking much nicer than when they went in. Puff pastry is a very forgiving king of thing. 😁

    Excellent recipe as always! Definitely take up John's suggestion to cut in half or better cut into thirds for finger food buffet! Serve with HP or mustard dipping sauce! We put serial number labels on ours! Never have any left!

    Made these yesterday John. Came out great considering I don't know what puff pastry is. LOL! I bought some kind of "Crescent Roll" dough in a tube. Struggled with it, but got it done, and I'm sure they weren't as good as your, but we liked them! Wife told me later have to look in the freezer section. Oh well, next time. They were very good with breakfast this morning.

    I use the frozen puff pastry for my cheese and onion pasties, 20 seconds in the microwave on full wrapped in kitchen towel and it’s thawed! Btw parchment paper is the way to go when baking, no sticking issues whatsoever.

    Another very good show, Sir John. Pig in a Puff. You should try Texas "klobasnek". American version of meat filled kolache. Jalapeño/Cheddar/Beef Dog inside kolache dough. Oh my word.     I dice an onion and some bread crumbs with some dried sage and garlic granules and smoked paprika with my sausage rolls and they stay sooooo moist and tender and I use lidls deluxe sausages so I don't have to skin them 😊😊😊

    I will also brush in just a touch of dijon mustard on the inside in half of the batch before rolling. It gives them a wonderful flavor but it is a bit different. It is a nice to have variety between that many with half being tangy/sweet and half being rather normal.

    John, this was a great video and brought back some fond memories of our dearly departed friend Pam. She was from Ipswich but married a US military man and moved to California where we met her. She and her husband Dave were just like members of our family and each and every Christmas she would bring a plate of her wonderful sausage rolls.
