- This beef tongue speaks for itself (sorry I had to).
Something I find interesting about food is that our experiences with it change as we grow. When I was younger my dad often came home with beef tongue. I always thought the texture was weird and even though I ate it, I never truly appreciated it.
It wasn’t until my twenties that I accepted the fact that it was really just another cut of beef, and I’ve since grown to love it. It’s a good reminder to me to stay curious and open minded when it comes to food and cooking.
Like any tough cut, tongue needs to be tenderized (though sliced thin and grilled is great too). It’s often traditional to boil it for this step, but I decided to combine boiling with smoking to achieve the texture I was looking for. Let me know if you’ve tried tongue!

One of my favorite meals was made by a guy I used to know from Oaxaca, he made tongue and cheek tacos by braising the meat for like two days, it was seriously delicious. Haven't seen that guy for close to 13 years now, I hope he's okay.

When I was younger I took a bad fall, ended up chipping one of my teeth, but not before I bit through a good chunk of my tongue. The taste buds and flesh where I’d bit was more like an unfinished deli-slice. There was barely a bit of meat connecting the bit I had accidentally sliced away from my tongue, and amazingly it didn’t fall off. Tongue skin is tough, and having taken care of cows for a while, I promise you theirs is 10x as thigh and durable as ours.

As a person with a Mexican family I can confirm we make tacos with this kind of meat and it is some of the best tacos I’ve ever eaten along with the birria tacos.
Barbacoa beef cheek and birria are my fave followed by Al pastor. Tongue ranks low. Even lower then buche for me.

There was this taco truck like 8 mins from where I used to work. During my lunch my buddies and I would always go and get tacos my favorite was the Beef Tongue Tacos. It’s underrated, sadly I don’t work there anymore.

@@Tizral Tacos are made out of corn and they are hard and break easily, kinda like tortilla chips. Tortillas are soft and round pieces of food, just like in the thumbnail for an example.

Growing up, my best friend was from Mexico, and I would go to their house A LOT. One day her parents made dinner, and it was tacos and they told me it was chicken. I finished a whole taco and her parents started laughing their asses off. I was confused and asked why they were laughing and they go “JJ, we told you it was chicken, that’s cow tongue.” I told them I didn’t care, it was delicious and I’ve been searching for a place that makes them well ever since in my adulthood.

The problem is chicken tastes like whatever you make it with. Chicken with butter taste like butter, chicken with garlic taste like garlic. Beef tongue taste like beef. Beef tongue with garlic tastes like beef with garlic. There is no mistaking it with chicken. Even if he didn’t know it was beef immediately, he sure as hell would have known it wasn’t chicken. People mistake cat for chicken in China the same way snake meat actually tastes like chicken( I've had some on a overnighter). Grew up eating beef tongue. Never seen anyone put mustard and other flavors on. My family would kill me if I did that. Just salt pepper with the lime onion and cilantro is what we did. Gonna have to try this one. Good job Max, that looked absolutely delicious!

The only time I've had lengua tacos, I could see the taste buds and that made it a nope for me. I don't know if the restaurant didn't remove the skin or what, but it didn't taste good enough for me to get past the taste buds texture

Is the texture close to any other cuts? I’ve heard that tongue is kinda rubbery which makes me not want to try it, but the way max makes it looks super tender

@@ramzeezthamightygod Depends how you cook it. I've had it both rubbery and tender and I think I prefer it rubbery. If you slice it thinly and put it on bread it makes for an amazing snack. I'd recommend looking for recipes for beef tongue in a slow cooker for best first time results.
@@craftmaster300 Thanks, I’ll have to try it 🙏 My grandma (rip) was Cuban and Jewish so she always loved things like tongue or liver and onions-as a kid I was a tad picky but if she were alive now I would definitely try her tongue. She used to make our traditional foods and send it in the mail frozen❤️ I miss her cooking
