Tom, you wore the perfect lemon yellow T-shirt to make these cookies. That's a good color for you to wear. I love lemon and will definitely try this recipe. I'm very much like you and Melissa in favoring soft cookies, so your advice of freezing them first and then baking is a good idea. Other cookie recipes I've made always called to chill first but they still baked flat. I like the big, rounded look to your cookies.

Even before you commented about your juicer being your mother's antique juicer I was eyeing it. It is a beautiful example of Vaseline glass. This glass was made as early as 1830 but was most popular between 1880 and 1920. The name obviously references the color of the salve it's named after, however, some of the earliest references to it called it Canary Glass. Much fine art glass was made during those time periods but none are quite so easily recognizable as Vaseline Glass. Not even Carnival glass with its various colors and some artificial color flashing can be identified as quickly by non glass collectors. Vaseline glass was made with a rare earth element - Uranium. That's what gives it its distinct color. During the depression glass era many colorful pieces of glass were made. Some were even similar - note similar - to Vaseline glass. To verify if glass contains uranium you must put it under a black light. The same type of light rock collectors and geologists use to detect minerals in stone. The various minerals reflect a specific color under the black light. Lead, as in lead crystal, reflects a very pretty blue. Cranberry glass that contains gold reflects kind of a dark oil slick that has colors running through like an oil slick that gets hit with light. Vaseline glass reflects back a very bright neon green. When I was in the antique business using a black light was how we verified if something was just a well colored glass or the real thing. To see a picture of true Vaseline glass inde a black light check out this link. I hope you find that as interesting as I do these lemon cookies.

Actually, Tom, I’d love to park myself on one of your stools and do just that. I can’t tell you how much I enjoy watching your videos. Not only for the great recipes, but you and Melissa seem to be genuinely great people. Please keep up this great effort!

Love this recipe! Re: the flour, it's not the brand. Flour compacts. You need to weigh the flour for a baking recipe, always. 1 cup of flour is 120 grams, but when people "scoop" it, they often actually end up pressing like 160g into the cup. A scale is only $20 at any store. But if you don't have a scale, just whisk the flour first and fill the cup by using a spoon like a shovel, then level the cup. NEVER scoop flour with the actual cup or you'll get way too much.

Your recipe brought a few tears to my eyes because ny father was a huge lemon lover. If he was still with us I would of baked him a batch of them. For Father's Day I always baked him a lemon cake from scratch. After it cooked I sliced the layers & add lemon pudding & pie filling. For his birthday it was lemon pie. Thank you for another great recipe.

I have my husband's grandmother's lemon bread recipe and it's one of the best darned things I've ever eaten! I bake about a dozen loaves during the Christmas season to give several loaves away and keep a few on hand for company and to snack on. A cousin of mine that I hadn't seen in quite a spell was in town visiting. She came over for coffee one afternoon and I offered her some of the bread to have with her coffee. She politely declined, saying that she really didn't care for lemons, but if I wanted some, to go right ahead and she'd be fine with just the coffee. I did get it out, along with some of the chewy ginger cookies that I'd also baked for the holidays and we sat down to do some catching up.
About 10 minutes into the conversation, she said "Gosh, that lemon bread sure does smell good. Maybe I'll try a little piece." Well, I cut her a modest slice and put it on her plate. Let me tell you, we sat there gabbing for about an hour and a half and don't you know it, the two of us polished off 3/4 of that loaf of bread! And she had a copy of the recipe in hand when she left that day! I'd say that was quite a compliment to my husband's grandmother!
I just love this recipe for lemon cookies! The only recipe that I have or have made, is for little iced lemon cookies that are more the texture of a 'Nilla Wafer, but these look much more along the lines of my kind of cookie! I can't wait to try them! Thank you for all of your lovely recipes and the wonderfully detailed instructions! I love listening to the two of you bantering and laughing together. It reminds me of cooking with my husband! Shhh... 🤫 Don't tell him, but he's a much better baker than I am! 😆 (I'm a new subscriber!!☺️)

These cookies are nice and soft not crispy like a wafer. I think you're going to love them. And the fact that you can freeze a bunch and bake a few along as you need for fresh, warm cookies is an added bonus.

Zest every citrus variety you have and let it air dry naturally on a saucer on the counter and store it in a reused spice jar. The oranges the kids had for after school snacks or the grapefruit you had for breakfast, whatever, zest it first. You'll never have to purchase zest.

Hey Tom, I never knew that about flour. You always have the best tips~and gosh, I would've never thought to freeze cookie dough. I guess I thought they wouldn't bake well or correctly. It's one reason I don't bake cookies for myself; I'd be as big as a house eating a batch of cookies b4 going bad.
I'd like to make these for my brother for Christmas; I learned last Thanksgiving that he liked lemon treats. My only problem with this recipe is that I don't have a stand mixer. You had to mix these for a good while; any tips on making these with a handheld, is it doable?

I make a lemon cookie that looks like this, but my recipe is using a lemon cake mix and cool whip along with lemon zest and the lemon juice. I have my mother's juicer but mine is clear.

You have to remember to lock your mixer. And I bought that paddle and all it does is spray the flour everywhere even with the shield on . Waste of money. But those cookies really look good, makes my mouth water.

I love your recipes. Last night I made your Creamy Chix Gnocchi Soup. Delicious. How long do you keep your butter on the counter? I'm nervous to do that.

If your juicer glows under a blacklight, that would add to its value. It's what they call Vaseline or Uranium glass. Collectors love this stuff.

I agree Melissa. I don't like chewy juice either.

Add some finely chopped Rosemary to lemon cookies, lemon bars, lemon bread, or lemon whatever. Adds a wonderful, different “kick” to your recipe!

Maybe Kitchen aid could offer a specially 'frequency' reducer kit that puts the motor at one speed slower, soft'start'....then switch kit box 'off' and back to normal speed ranges. IF such a thing is possible---sort of like a sewing machine control.

We love lemon anything. My husband makes lemon cookies every Christmas that only takes 3 or 4 ingredients. We found the recipe in an old church ladies cookbook. My 23 yr old granddaughter loves them so much he makes one batch just for her. Easy and delicious. It uses Cool Whip in it.
