What to do with that excess whey:

You will need:
1/2 gallon of milk (I used skim, but any fat content will work)
About 3 oz Greek yogurt as a "starter"
A large pot
Spatula
Thermometer
Large glass or ceramic bowl
Foil
Hand towels
Oven
Strainer or colander
Cheese cloth or an old T-shirt
PROCEDURE:
STAGE 1, The Night Before
Pour milk into the large pot, and bring heat to medium. Allow to heat until temperature reaches 180F.
Stir regularly so it does not burn at the bottom
Check temperature regularly.
Pour milk into a glass or ceramic bowl, and allow to cool to about 105--110F. I aim for 108F.
This should take around 45 minutes. **Many people leave their milk in the stainless steel receptacle at this stage, however I've read that a stainless steel environment can interfere with the bacteria culture, so I choose to transfer to glass/ceramic.
Leave completely uncovered at this stage. **If you're braver than me----Other sources say----you can test the milk temperature to find if it's cool enough simply by inserting your fingertip into the milk-- if you can hold it for 10 seconds without burning, it should be good. (I've never done this-- I trust my thermometer more than myself)
WHILE the milk is cooling, heat your oven to 110F. If your oven does not have 110F setting (mine does not) you can just turn to it's lowest setting and turn off when you've got about 15 minutes of cooling time left (I turn mine off when the temperature of the milk reaches about 120F). If your oven has a warm setting, you can use this and leave it on all night.
Once milk reaches 108F, stir in 3oz (1/2 of a single serving cup) Greek yogurt as your starter culture.
Make sure your yogurt contains "live cultures"-- it should say it on the label!
Whisk to combine well.
STAGE 2, Overnight
Cover the pot with a lid or foil, and cover top and sides with towels. Transfer to warm oven.
Leave in warm oven 10--12 hours. SLEEP! **Some people leave theirs for as little as 5 hours. If you want your yogurt creamier, I'd suggest leaving it longer. I've found 12 hours to be the right amount of time for the mixture to thicken and congeal to my liking. **(108 is approximately the temperature that yogurt cultures begin consuming the lactose in the milk (fermentation - the same process that produces beer from wheat or wine from grapes)-- this is why we leave the oven at a warm 110F temperature.)
STAGE 3, In the Morning
12 hours later, remove from oven. Pour off when that has moved to the top, and stir remaining yogurt. THIS IS NOW REGULAR PLAIN YOGURT. You can stop at this stage if you do not want Greek yogurt.
For Greek yogurt, transfer your stirred yogurt to a colander/strainer that is lined with 2--3 sheets of cheesecloth (or a T-shirt if you have one you don't care about), and sits on top of a bowl or pot to catch the excess whey. Transfer to the fridge.
Allow to drain for about 3 hours, removing the whey from the bottom of the bowl as necessary.

Oh bummer! Are you allergic to all dairy or lactose-intolerant? There's much LESS lactose in Greek Yogurt because of the filtering of the excess whey... some people with lactose intolerance can handle smaller amounts of Greek Yogurt because of this! Thanks a lot, but I am allergic to ALL types of dairy!!! But I'll try and find Dairy Free Greek Yogurt, and use that as my starter, and use some other milk, like almond or coconut, for a coconut flavoured yogurt!!! Thanks :)
Paola Gomes Have you ever tried goat or sheep milk yogurt? They sell it at whole foods or trader joe grocery stores. It's really good and may not the awful symptoms regular cows milk can cause.

Yay so glad you this can be useful for you! I haven't personally tried much drinkable yogurts or kefir, but there can be health benefits! It's loaded with healthy probiotics and can help with gut health, among other things. It would depend on what kind of kefir or drinkable yogurt you get, the ingredients in it, and of course your body and your lifestyle! Some drinkable yogurts or kefir can be full of added sugars or artificial ingredients, which would negate some of its health benefits. And, dairy-based yogurts or kefir in general may cause some people problems with indigestion or inflammation. YOU have to decide what's best for you! Make sure to read labels and pay attention to how your body responds if you do give it a try!

I wanna make this so bad but I don't have a thermometer and I've read that it takes around 3 min if milk is at room temperature and 5-7 if its straight from fridge. Can I just try with that?

+Carol Napolitano I actually haven't tried! I'm not much of a yogurt person in general. I don't think coconut milk would work as a starter because you need the bacteria from the dairy for it to work. :)

If you have a warm setting on the oven that would be ideal, if not, then just turn the oven off but don't open it and let it sit overnight in the warm oven :) The longer it can sit, the creamier! :)

Yes yogurt making can get complicated but this is relatively simple! :)
Could you use a crock pot or slow cooker instead of an oven? Or possibly a fondue pot?
mark bowser I think I've seen people make Greek yogurt in a crock pot but I've never done it myself so I'm not sure how different the process would be :)
Can you use your yogurt to make yogurt indefinitely? Or will it eventually all turn sour? Like if you keep making new batches with a starter from the last batch.
If you're using it from the last batch you made you can keep doing it :)
Could you do dairy free milk and yogurt to make dairy free yogurt?
Unfortunately no! You need the cultures of the dairy for this to work. I have not tried to make dairy-free yogurt at home yet, but thanks for the idea! :)

I know you've said it in the video but I just want to make sure. I have plain yogurt and want to turn it into greek yogurt , so I only drain it and put it in the fridge for 3 hours right ? GREAT video btw you are awesome!
nadia a.a :) At the stage of turning regular plain yogurt into greek, you just need to strain it in the fridge. A few hours should do, but it's going to depend on how thick you want it. You really can't go wrong here, if you let it sit a little longer, it will strain a little more and thicken up a bit more :) Thank you!

I just use one teaspoon of any regular yogurt with culture pasteurized mik, into any type of milk at room temperature for 6 onz. I stir it and put it my over overnight. Next day i have yogurt.
I don't go into the warming process and then let cool milk. Plus I don't use a thermometer.

1. Can I strain for a less amount of time so I can get some extra protein (because I'm not a fan of the texture of Greek yogurt)

+Gabrielle May Sure you can strain for less time, it will be less thick though. Yes add puree! This will last around 7-8 days in the fridge, most people make it weekly.

Kirsty Leigh Fitness I didn't calculate it out, but you only really need 1/2 gallon of milk and a starter yogurt so it's cheaper than buying it for sure! The half gallon of milk will yield you about 4 cups of yogurt (about 1 of the large yogurt tubs) :) I hope you enjoy!

My grandma just pours the milk/yogurt mixture in glass jars and then leaves them overnight so she doesn't need to transfer the yogurt afterwards. Many Americans love mason jars and diys, they'd be in awe if they found out they can diy yogurt in a mason jar :D

I caved and bought a $20 dash yogurt maker and it comes with a strainer. I microwave the milk to 185 degrees, let it cool to 110 degrees add the yogurt starter and let the maker culture the milk for 10hrs overnight. I strain in the morning for two hours in the fridge and wala, Greek yogurt so yummy I bought a second one so that I can do a whole gallon in one session. They sell them on Amazon for cheap. I give the left over whey to my hubby for his protein drinks, oh can you pretty please do recipes for leftover whey I have so much of it?

You can strain plain yogurt so it becomes Greek :)
I tried this but mine didn't come out smooth it was more like ricotta cheese. does that mean it's spoilt and I should discard of it or is there something that can be done

It might depend on the bacteria and the type of milk you use. My grandmother uses unpasteurized milk /she boils it first i think/, but it's like real milk, fresh from the cow in the yard and the result is muuuuch thicker than what happened in the video. Also the yogurt makes a difference, try different kinds, but thicker is usually better.
Of course, it might have just gone bad instead, try different yogurt next time

Nason St. Clair Well because what you need is the bacteria that's in the yogurt.... not the yogurt itself. But using the bacteria that's already in the store bought yogurt is the easy route lol
The bacteria that turn milk into yoghurt are basically everywhere, if milk is left sitting at the right temperature it will sooner or later turn into yoghurt. The reason we don't rely on spontaneous fermentation is because cultitivated stems of the yoghurt-making bacteria yield more predictable and better tasting results.
I know this question is 2 years ago but I had the same question for my grandma and she told me that they used to boil the raw milk to kill it's poison (their own pasteurization concept) and then she said they cover it up and leave it in the roof at sundown (in the hot middle eastern weather) and taking it back at Dawn, turns out milk turning into yugurt is a natural process as long as the environment is clean with the correct temperature, and not homogenized cause you'll need the living enzymes for this process..

Greek yogurt is actually a great source of protein, it's made from milk which has protein, and then through the straining process that protein gets more concentrated

I'll eat healthy food, but keeping those less healthy foods AWAY, that's the problem lol... and YES! You can use an old T shirt in place of cheese cloth :) Works great to strain! I buy cheese cloth in my grocery store and have found it in every grocery store I've needed it, it's also in Target :) Cheers!
I am curious about something... why is Greek yogurt considered healthy while milk is considered not too healthy? It seems that people are always trying to avoid milk by buying milk substitutes... so can Greek yogurt really be that healthy?
Greek yogurt provides great protein and healthy bacteria, milk doesn't have that great gut bacteria and is essentially just dairy, which also has a good amount of natural sugar. Milk isn't "bad," but it isn't providing much either. We get calcium from many other sources, for instance, and a lot of people are sensitive to dairy. I think a lot of people do better without dairy completely, including yogurt, but to each his own :)
Or go with Alton Brown's idea and use a heating pad as a means of heat. :D

That's all that makes it Greek yogurt? The straining process? But plain Greek yogurt tastes tangier to me than plain non-Greek yogurt. Actually the flavored Greek yogurts have that tang as well. I find it unpleasant. Aggressive even. I bake with the Greek for the added protein but if I'm eating it as yogurt, non Greek for me.
Greek yogurt definitely has a tangier taste, it's not naturally sweet!

Really? "How to make greek yogurt. Step 1: Buy greek yogurt".
You need a starter. After that you keep reusing it. Same with kefir, kombucha, even pickled cabbage. My vietnamese mother makes pickled cabbage by pouring a little of the jasmine rice liquid from the rinse. Which makes sense because the organism on rice was discovered to make soy sauce, sake, etc...That is more risky because you are counting on the right conditions for the good to overtake the bad. This takes experience and practice. Store bought plain yogurt has everything you need unless you want to risk it and painstakingly culture your own organism.
You won't need to buy Greek yogurt once you have the starter.
There is Lactobacilicus Bulgaricus in this yogurt.. It's not Greek, it's Bulgarian yogurt!

Because Greek yogurt contains live active cultures, you need some source that will provide those cultures. You need a bit of Greek yogurt to get started, but once you do you can make your own and save some money rather than buying it in the future!

Joghurt was made in different parts of the world long before Turkey even existed as a country. Granted; nomads speaking languages from the turkic family (i.e. not turkish per se, just related to turkish) are among the candidates of first inventors of yogurt, but at the time those nomads would have live in the Eurasian steppe, not in what at the time was still called "asia minor" and would later become Turkey.
And the term "greek yogurt" refers to a way of processing (with much longer draining times than turkish Süzme Yoğurt) that was invented in Greece.

Once your yogurt is all done you can sweeten it as you would normal greek yogurt! Add jam, sugar, natural sweeteners, fruit, anything you like!
