Armando Carapia, head baker at Boichik Bagels in Berkeley, CA, has spent more than 30 years of his professional career in the baking industry, most of them at Bimbo Bakeries USA (BBU). When BBU decided to shutter the bakery where Armando worked, he moved to Boichik. Now, he gets to bake with tradition and technology.
