    awesome vid mate and from a complete beginners, its great to see each step explained, I have an Mb800 (just) and a brisket in the freezer but not had the guts to try it yet,............ you did say for the rest you could leave it in the MB, is this kind of indefinitely ?
    so could I cook Saturday and leave it in ready for Sunday lunch ?

      Hi, thanks for the comment & really good question. Once the brisket is finished allow it to cool down to 145f / 63c. With the MB already warmed up to 145f / 63v put the brisket in & it should hold happily until lunch the next day. I also make sure the vent is closed on the MB as it helps keep the heat in.       Try beef ribs, they are actually really forgiving, more than brisket tbh. John Davidson butchers carries a really nice selection

    You know the bark is gonna look good when the seasoning looks like a bark before you even put it on the smoker. Awesome.

      Haha you’re not wrong. It pays dividends to season the night before & the base mushroom soy sauce & finishing layer of Sure Shot Sid’s is awesome. Thanks Al

      A quick question for you. Does your slicing knife have a 12" or 14" blade? The one you linked to is 12" but SmokeTrail's link is to a 14" blade. Also, where do you buy the rub from? Thanks Al!!

    Fantastic video and includes tips that I will be using for sure. I really liked the season the sides first tip as I am always messing up the top bark 👍

    Excellent and thumbs up/subscribed. Patience and perseverance and cherry wood chunks for a soft, lite blue smoke. If his brogue is too thick the C Captions will translate from British to American. This is a cooking culture.
