- Mastering Brisket: The Ultimate Offset Smoker Guide, Everything you need to know to smoke an incredible Brisket on your offset Smoker, The thing that got me into BBQ was the dream of making the perfect brisket, the dark bark and the juicy tender meat. I used to watch legends like @BBQwithFranklin and @howtobbqright and watch those guys knock it out the park without batting an eyelid, they made it look so easy and despite following them as closely as I could I could never get it as good as them. But over time I have learnt how to make the perfect brisket, the brisket I dreamed of making and so in this video I show you everything I WISHED I HAD KNOWN when I started so i could have been cooking amazing brisket. #brisket #offset #smoker
Follow the steps in this video and you will be making incredible brisket before you know it. Dont forget to grab you free smoking planner (link below) and also find me on all the other social platforms (links below).

awesome vid mate and from a complete beginners, its great to see each step explained, I have an Mb800 (just) and a brisket in the freezer but not had the guts to try it yet,............ you did say for the rest you could leave it in the MB, is this kind of indefinitely ?
so could I cook Saturday and leave it in ready for Sunday lunch ?
Hi, thanks for the comment & really good question. Once the brisket is finished allow it to cool down to 145f / 63c. With the MB already warmed up to 145f / 63v put the brisket in & it should hold happily until lunch the next day. I also make sure the vent is closed on the MB as it helps keep the heat in. Hope that helps & tag me in your photos if you have an Instagram. Cheers Al
@@BigAlsBBQ Perfect , thanks buddy, feeling slightly more optimistic about the brisket now, also just watched your Beef short ribs, which I have and haven't had the guts to waste yet
Try beef ribs, they are actually really forgiving, more than brisket tbh. John Davidson butchers carries a really nice selection
@@BigAlsBBQ hi yes all my stuff is from John, but want to do his meat justice and give it half a chance to taste good
You know the bark is gonna look good when the seasoning looks like a bark before you even put it on the smoker. Awesome.
Haha you’re not wrong. It pays dividends to season the night before & the base mushroom soy sauce & finishing layer of Sure Shot Sid’s is awesome. Thanks Al
These are great tips for anyone on the fence, deciding whether to give this a go.
Thank I appreciate the comment. I really tried to make the video that I would have wanted to watch when I started. Cheers Al
Al, this is brilliant! I'm STILL waiting for Danny to build my pit but this will be my bible once I get my hands on it!! Thank you again!!
Sorry to hear you haven’t got it yet but hopefully you will soon. Thank you for the kind comment. It’s comments like yours that makes all the hard work worth it. Cheers Al
A quick question for you. Does your slicing knife have a 12" or 14" blade? The one you linked to is 12" but SmokeTrail's link is to a 14" blade. Also, where do you buy the rub from? Thanks Al!!
Very helpful for many. Thanks for sharing.
Thanks Lee, glad you found it helpful. Al
Great list of tips, and a fantastic looking Brisket! 👽
thank you, glad you liked it and yes the Brisket was so good I couldnt stop eating it. Cheers Al
Fantastic video and includes tips that I will be using for sure. I really liked the season the sides first tip as I am always messing up the top bark 👍
Thank you. Yeah I was always doing the same but it just occurred to me to do the sides first & then the top /Doh 🤣🤣
Great video, Al, and the brisket looks delicious!
Thank you. Nothing makes you smile more than smoking the perfect Brisket & I couldn’t stop smiling or eating it 🤣
Excellent and thumbs up/subscribed. Patience and perseverance and cherry wood chunks for a soft, lite blue smoke. If his brogue is too thick the C Captions will translate from British to American. This is a cooking culture.
Thanks for watching & subscribing really appreciate it. Decent cherry wood can be hard to get in the UK so tend to use white or red oak. Cheers Al
Looks amazing and great advice throughout. Thanks Big Al!
