When i visited Nigeria i visited lagos and Anambra state...i forgot the village i was in.. but they cooked this grasscutter better than this..although i didn't or wouldn't dare eat that..seems he rushed cooking that thing..looked to be done only on the outside
This meat is a delicacy if well done. just a little more cooking and seasoning . I guess alot of light stomached people would prefer more washing in preparation as well. What people have to understand is that you were trying to show a dish indigenous to your home area. Instead of appreciating that theu are small.kinded and judge unnecessarily. There will always be small minded people brother. Good thing they always show themselves. Keep doing you ,blessings and keep showing mote food indigenous to Nigeria please!❤🙏🙏🙏

This is called THE GREATER CANE RATS. Most countries in Europe, America and Asia and some countries in Africa don't know it as GRASS CUTTER. There are also another specie called THE SMALLER CANE RATS. It is a rodent but not a rat proper, since it belongs to the Hystricomorpha (porcupine family). It has the thickest body. Though it has poor sight it's smartness is based on sense of hearing and smell. A very fast runner and skilled swimmer. Thanks

Since the meat was undercooked, I would cut up the rest and put a gravy to it. Even though I don't think I could eat it I don't want it to see it thrown away. Also putting a gray to it will help with the toughness of the meat.
