Bamboo Shoots In Chili Oil 🎍🎋🌶 | Better than the commercial type

    Copycat version of bamboo shoots in a bottle available in Chinatown. No preservatives or additives. Fast and easy to make using simple ingredients. One of my favorite dishes to eat with rice. Bamboo shoots will always stay crunchy and will never get soggy. You can use other bamboo versions (julienne, slices or whole) but I prefer the long ones because they are young and tender.

      Please let me know how you like it. My daughter in Hawaii loves this recipe. Whenever I go there I always buy her 6 cans. When I was there I asked how many she had. She said 6 because she didn't want to run out so I bought her more. She hates going to Chinatown.

    You can get one of those Mandoline Slicers and you can slice the bamboo in that can any way you like, quick and fast and precise.

      @@HawaiisPickleLady You can slice it into thick slices also. The thickness of the slice is adjustable. Then cut the slices into chunk.

    Thanks for sharing. I love the commercial ones but not a fan of the preservatives. Could these be jarred and frozen? Maybe water bath canned?

      I think freezing would change the texture. It probably can be canned but never tried. Experiment.

    Great DIY recipe. I find some the oil in the packaged bamboo shoot to be rancid.

      Don't know what kind of oil they use. Plus they have preservatives and maybe msg.

    Can I use chili powder that's American? Or is it not very good?

      Chili powder is different, has oregano, garlic, etc. Use straight chili flakes.

    Will try this and add it to jazz up my ramen. Does it taste as good with fresh refrigerated bamboo shoots ? Have you made the Chinese spicy turnips sold in the can or package . It was in large round pieces that were sliced and fried with pork or beef. Some cook it with noodles Do you remember having this ?

      Yes, I think it is called see chin choy and it's mostly the bottom of the turnip without any leaves. It's probably salted and packed with lots of salt and chili pepper paste. My mom used to soak it cause it was very salty and put it in steamed pork hash along with the pickled sweet cucumbers in the can or jar (cha gwa).
